WINEMARKING PROCESS ‘’ The grapes are harvested near the middle of October and after careful manual selection, they are softly pressed and placed in horizontal masher to ferment at a controlled temperature for 10-15 days. The mashing of the grapes includes pounding down and the repassing them for a careful extraction of the noble components of the grapes. Brief sharpening of the sediment with the malolactic fermentation process, then rests for six months in French and American barrels, partly in a steel vat. After bottling, it is aged four months in the bottle.

Sapore:      Morbido con intensa espressione di frutta fresca che persiste donando note speziate tipicamente mediterranee

Temperatura di servizio:       Ottimo a 20°C

Abbinamento pasti      Vino che accompagna primi piatti e carni bianche. Sorprendentemente abile ad accompagnare sughi con selvaggina e carne alla griglia.

Alcool: da 13° a 13,50°

Zona di produzione: Marzi (CS)

Altitudine: tra i 450 m. e i 500m  s.l.m.

Vendemmia:  primi di ottobre

Uvaggio :Arvino,Greco Nero, Magliocco Canino, Nerello Cappuccio.

Esposizione dei Vigneti: sud con orientamenti dei filari  nord-sud

Sistema di allevamento: Guyot

Vinificazione:

Le uve vengono raccolte verso i primi di ottobre e dopo un’accurata cernita manuale, vengono sofficemente pigiate e poste a fermentare in maceratori orizzontali a temperatura controllata per 8 - 10 giorni. La macerazione comprende sia rimontaggi che follature per una accurata estrazione dei componenti nobili dell’uva. Dopo l’imbottigliamento altri 3 mesi in bottiglia

Vinificazione

Le uve vengono raccolte verso la I – II  decade di Settembre e dopo un’accurata cernita manuale, vengono sofficemente pressate, decantazione statica a freddo del mosto ed eliminazione delle fecce grossolane.

La fermentazione alcolica avviene nei serbatoi d’acciaio inox, con controllo della temperatura per donare freschezza e carattere deciso.

Affinamento

Dopo l’imbottigliamento altri 2 mesi in bottiglia.

SinceancientGreeks’ time, therewasa flourishing and richlandcalled Enotria Tellus i.e. "Land of Wine".TodaythatlandisnamedCalabria, and itstillproduceswineswith unmistakable characteristics thank to the particular natural conditions e.g. the sun exposure, heat and humidity. Once upon a time there was a local doctor, Vittorio Colacino, who apart fromtaking careofhis patients, also enjoyed growingan ancient vineyard. This Vineyard produced a wineknownas“BRITTO”,  intensewith a spicy sour cherry perfume...

From such a passion for earth and life, the Colacino Company was founded. The company is nowadays managed by Dr Colacino’schildren: Mauro and Maria Teresa;beyondsharingthe same passion for wine inherited from their father, they also introduced a touch of innovation and managerial skillsto the entire production line, firmlydeterminedto constantlyimprove an alreadyhighlyappreciated product.

In 1975, Mario Soldati , wrote in his famousbook, Vino al Vino alla ricerca dei vini genuinipublishedby Mondadori: “…. visit to Dr. Vittorio Colacino, in the village of Marzi, Savuto fromfour different vintages, from ‘71 to ’74….”“Wines should   be  drunk and understood  where they were born….”   “…Nothingis Savuto, Savuto isonlyBritto.”
