LA DONCELLA DE LAS VIÑAS CHARDONNAY

WINEMAKING PROCESS

Direct extraction method free-run juice following a cold skin-contact maceration, then fermentation in temperature-controlled stainless steel tanks for around eight to ten days. Once the alcoholic fermentation is completed a weekly bâtonnage is done over a period of three months before the wine is prepared for bottling. In vinifying this way, we achieve a wine with excellent aromatic balance and superb volume on the palate. 

GROWING SEASON 

The 2020 vine cycle had normal, average rainfall in spring, followed by hot weather in summer with mild night temperatures that enabled the grapes to ripen with perfect balances between sugar and phenolic ripeness. 

TASTING NOTES 

A very clean, brilliant pale straw colour with greenish glints. On the nose, tropical fruit aromas, such as ripe pineapple, come to the fore, along with attractive notes of apple and banana. On the palate this wine has a wonderful silky, smooth texture.

WINEMAKING PROCESS 

A rosé made by direct extraction. As soon as our Tempranillo grapes have been put into tank, the first juice is run off to produce a pale-coloured rosé. This is the juice that we use for our wine. It is then racked into a stainless steel tank where it is fermented at a temperature of 16oC for around 8 days. In vinifying this way, fresh fruit character is kept intact. 

GROWING SEASON 

The 2020 vine cycle had normal, average rainfall in spring, followed by hot weather in summer with mild night temperatures that enabled the grapes to ripen with perfect balances between sugar and phenolic ripeness. 

TASTING NOTES 

A medium-deep, intensely-coloured rosé with delicate violet tones. Impressive in every aspect, the wine is lively, clean, bright and very appealing. Candy notes come to the fore among wonderful aromatics featuring amazing lollypop and red berry fruit touches. On the palate, the wine is soft, complete and very smooth.

The grapes go into one of our self-emptying stainless steel tanks, in which the temperature is brought down to 12°C. The selected yeasts we use are slow-developing, favouring an enhanced extraction of aromas and colour. The result is a youthful wine with excellent structure, deep colour and good aromatics and perfectly suited to barrel-ageing. This wine stayed in barrel for around 6 months, during which it gained complexity and good length of flavour.

TASTING NOTES 

A deep, intensely-coloured red with blueish undertones. Clean and very bright. On the nose, red berry and black fruits come through with delicate hints of cocoa and vanilla. Perfectly ripe on the palate with soft, harmonious tannins. The finish is long and structured with a lovely lingering flavour.

Climatically, the 2019 vintage was marked by low rainfall and mild temperatures with a spell of hot weather at the end of the summer. These conditions helped maintain the grapes in perfect health, which showed excellent balances between sugar and phenolic ripeness. 

TASTING NOTES 

A medium-deep, intense black-cherry colour with a lovely ruby hue and violet undertones. Clean, attractive and very bright. Fruit aromas such as blackberry and redcurrants come to the fore with lots of creamy notes and touches of spice. On the palate the wine shows lingering ripe fruit flavours that are well balanced by the acidity.

WINEMAKING PROCESS 

This wine, which comes from our Chardonnay vineyard, was first put into stainless steel tanks from which the free-run juice was drained having undergone a 24-hour skin-contact maceration. Once the fermentation had begun, the must was racked into 225-litre French oak barrels with “evolution” char. The staves of the barrel base were uncharred, while those of the central part had a light char and the upper staves had a heavier char. The wine stayed in barrel for around 5 months with regular stirring of the lees. The final result is a winemaking work of art. 

GROWING SEASON 

The 2019 vine cycle was marked by a cool spring and a late start to the summer season which then went on almost till the end of October. Rainfall was the annual average for our wine estate. This weather pattern caused a delay in the ripening process. Our wines showed very good ripeness and slightly higher levels of alcohol. 

TASTING NOTES 

The wine displays an intense straw-yellow colour with golden glints. It is brightly-coloured with an abundance of tears on the inside of the glass. Smooth and dense on the palate, this wine has very good structure with distinct smoky hints and a lingering finish.

TASTING NOTE 

An intensely deep colour indicating the wine’s concentration. Very bright. Great complexity on the nose thanks to the mix ofvarieties and vintages in the blend.
A wide range of aromas is revealed, from ripe fruit, such as blackberries, redcurrants and red berry fruits, to very well integrated notes of toast, cigar-box and spices coming from its time ageing in French oak barrels. It is fresh and unctuous on the palate with plenty of volume and good length of flavour. A wine which won’t disappoin.

The grapes of this vineyard are picked by hand in the early hours and taken to the cellar in small 15kg crates. After they have undergone a selection process on a sorting table, the fruit is put into our self-emptying stainless steel tanks where it stays at a temperature of 12°C to macerate for 12 hours. The temperature is then raised to 21°C for the fermentation process. This wine was aged for 12 months in extra fine-grained French oak barrels selected from the best cooperages in the world. 

GROWING SEASON 

The 2012 vine cycle was marked by low rainfall throughout the entire spring and summer. Temperatures were high during the day, while the nights were much cooler which prolonged the ripening process considerably. Crop yields were very low but of very high quality. 

TASTING NOTES 

A medium to deep, intense black-cherry colour with blueish, Bordeaux- coloured glints on the rim, characteristic of the main grape variety. Powerful red berry and black fruit aromas are perfectly integrated with the new oak.

A medium-deep, intense Bordeaux-red colour with a brick-red and ruby rim. Dense tears on the inside of the glass. Complex aromas on the nose with good integration of the French oak together with ripe compote fruit, spices and a violet floral touch. Beautiful balance on the palate with ripe, expressive tannins that provide good flesh. Develops nicely into a flavoursome, expressive mid-palate and finish.

Compared with the previous year, the 2012 growing season was wetter with rainfall reaching the annual average for our area. Temperatures were mild during the ripening period which helped produce very high quality grapes. 

TASTING NOTES 

A deep black-cherry colour with a ruby rim, dense tears on the inside of the glass and blueish glints reflecting the integrity of the wine. Ripe fruit aromas come through on the nose with patisserie aromas and balsamic notes reminiscent of Mediterranean mountains. Also spices with light, creamy, sweet touches together with smoky, toasty-oak hints.

D.O. PAGO GUIJOSO, we are a family property, the Third oldest winery reaching this Unique Appellation, also ORGANIC production and Suitable for Vegans wines. 

The Winery is created in 1987, at the same time as the vineyards of the estate begin to produce grapes, the wines produced at that moment were small editions that were commercialized mostly locally. In 2005 the winery obtain the DO PAGO qualification. From that moment the winery starts growing little by little. In 2013, the winery was acquire by the Conesa family.  

The familiar winery produce fantastic DO Pago wines and also Organic and suitable for vegans wines. 

The “Pago” appellation (D.O. Pago) is the most exclusive and difficult to obtain of all the Spanish appellations. Only a tiny number of wineries have acquired it (it is compared as the Grand Cru Claseé from France). To succeed in achieving this status, wineries must have a number of very special qualities, particularly in terms of terroir (there are only 16 recognized DO Pago). 

The winery is located in a privileged area bordering on the Protected Natural Park "Lagunas de Ruidera”, at an altitude of 1,100 metres, where the climate is extreme and the soil poor and pebbly, making each of our vines genuine individual works of art from which the raw material for our wines is honed.They are the philosopher’s stone of charisma and quality for our wines.
