5Cento IGT Toscano Rosso 2019

The 5Cento wine is made with 80% Sangiovese grapes, accompanied by other typical Tuscan varieties such as Canaiolo, Colorino and Malvasia Nera.

The vineyards of this wine brand are cultivated on medium-heavy soils with sand and fine stones, which give fullness to the body of the wine and the aroma of exceptional elegance and complexity.

The grapes are pruned and harvested by hand when they reach full maturity, usually between the third and fourth
September week; In the first stage the branches and leaves are separated, then the grapes are gently pressed and sent with the pulp to stainless steel tanks for alcoholic fermentation. Fermentation takes place at a controlled temperature of 26-28 ° C with selected products; Maceration on the skins lasts about 7-9 days. At the end of pellicular maceration and alcoholic fermentation, the wine remains at controlled temperature until the end of malolactic fermentation. From this moment begins the aging phase in steel tanks at controlled temperature for 8 months until the moment of bottling. During this time the wine remains in contact with its fine sediment and keeps it so that the product acquires body, softness and complexity.

Before bottling, the wine undergoes a final filtration.

Nose: fruity bouquet with hints of blackberries and other berries with additional spicy notes for flavor harmony.
TASTE: the wine is fresh, juicy and easy to drink. The acid components of the wine are balanced by soft and silky tannins, giving a sweetish aftertaste with hints of spices and light vanilla notes

Goes well with: Medium soft cheese, vegetables and any meat. Chilled it goes also as appertaining

Alsecco IGT Toscano Bianco 2019

The grapes for this dry white wine grow on the highest
Hills of our farm, where the most mineral and stony
Soils guarantee good ripeness, acidity and freshness of our product.

ALSECCO wine is made from Vermentino and Trebbiano grapes.

All grapes are harvested by hand in early September in small 12 kg boxes.

The grapes are then cooled for 24 hours at a temperature of 3 ° C to ensure subsequent processing at low temperatures, so as not to oxidize the must and preserve the aromas of the grapes and the future wine.

First the grapes are pressed at low pressure (about 0.6 atm), maceration on the skins takes place at low temperatures. This process activates the extraction of compounds from the skins that form aromatic substances. The resulting wort is decanted at 9°C for 48 hours for purification. After the clarified wort is decanted, with a temperature increase of about 15/16°C, alcoholic fermentation begins, which lasts at least 2 weeks. After the wort becomes wine, it is decanted and left for 6 months in steel on its natural sediment, on its cellular content of already inactive yeast, which with weekly stirring reveal softness and flavors over time and give stability to the future wine.

KITRI IGT Toscano Rosato 2019

KITRI wine is made from Sangiovese e Merlot grapes, "white vinification" or without skin. All grapes are harvested by hand in early September in small 12 kg boxes.

They are then cooled for 24 hours at a temperature of 3 ° C to ensure subsequent processing at low temperatures, so as not to oxidize the must and preserve the aromas of the grapes and the future wine.

First the grapes are macerated in a press on the skins for several hours to allow the juice to absorb the color required for our rosé wine, then the grapes are pressed at low pressure (about 0.6 atm) and the resulting wort is left to clarify for 48 . decanted hours at 9 ° C.. After pouring, the purified wort begins to ferment and increases its temperature to about 15/16 ° C. The alcoholic fermentation lasts at least 2 weeks. After the wort becomes wine, it is decanted and kept for 6 months in steel on "fine dregs", i.e. on its natural dregs of inactive yeasts, which impart softness and aroma with weekly stirring. A light maceration on the skins saturates the wine with the color components typical of rosé and gives aromas of red fruits that are pleasant to feel in the glass.

This leads to an increase in the quality of our wine.

Our two cantinas are equipped with the most modern equipment of the leading companies of the wine sector Defranceschi. The wine cellars BARRIQUE are equipped with new SAYRI barrels of French oak.

We use for the aging of wine barrels of the Italian companies Mastro Bottaio and Garbellotto, which have established themselves on the market. We also send wine for tasting to potential partners.
