Rivaner 2018

Kaiserstuhl - Weingut Karl H. Johner - Flavours of pineapple, with some herbal, floral components (white flowers / lily) and a hint of Mirabelle. Fresh, juicy, animating, elegant and tasty. On the palate for a Rivaner full-bodied with well balanced acidity. Not resembling a classic Müller-Thurgau. This wine goes well with salads, starters and asparagus.

Viticulture
The vineyards undergo an intense canopy management by hand, deleafing partly by machine and by hand. Excess grapes are cut off / green harvest.

Vinification
The grapes were all harvested by hand. In the winery 80% of the Rivaner grapes were destemmed and perfectly selected with our optical sorting machine followed by a manual single berry sorting. Fermentation took place in stainless steel tanks at a temperature of around 18°C.

Maturation
Due to the low yields for a Müller Thurgau in connection with a rather late harvest and a longer storage on the fine yeast (Lees), the shelf life is extremely increased. Also using screw caps with a tin-saran liner is a further advantage. During the first 3-5 years it will retain its current aroma. After that light aromas in the direction of beeswax will develop.

Vinification
The grapes were all harvested by hand. In the winery the grapes were destemmed and perfectly selected with our optical sorting machine followed by a single berry sorting by hand. Fermentation took place in stainless steel tanks at a temperature of around 18°C.

Maturation
Due to the low yields and longer storage on the fine lees, the shelf life is extremely increased. Using screw caps with a tin-saran liner also increases the shelf life.

Weingut Karl H. Johner Blauer Spätburgunder »SJ« 2016

Kaiserstuhl - Karl H. Johner -Intense red fruit (cherry / rose hip / cooked red fruit jelly) with delicate tobacco / cigar box and smoke from firewood. The wood from the new oak barrels is almost completely pushed back by the fruit. On the palate full-bodied and complex with red fruit jelly / sour cherries and delicate wild strawberries and some pepper. The tannin is full and soft with only subtle astringency. After a long time in the glass, the cigar box and the smoke come out stronger. The acidity is fine and very suitable. The finish is enormously long with red fruits, warm wood, vanilla and some coffee.

Weingut Karl H. Johner Pinot Noir Bischoffinger Steinbuck 2016

Kaiserstuhl - Weingut Karl H. Johner - Red fruits and currants appear. This is accompanied by nutmeg, ground coffee, tobacco, cigar box and dark chocolate. Full-bodied on the palate, sour cherry incl. cherry stones. The tannin is very elegant and finely grained... almost like a blanket on the tongue. Very gentle astringency (hardly dries out the tongue). This wine is now already extremely well drinkable and enormous fun. The acidity is fine and suits well and will give the wine a beautiful elegance with age. The finish is very long with aromas of cigar box and some sour cherries.

Viticulture
The fruits are from our single vineyard called Bischoffinger Steinbuck, which has loess and volcanic soil. Vintage 2011 presented us a lovely warm and dry autumn. It allowed us to spend the fruits additional hang-time on the vines to ripen perfectly. We were lucky to pick a dessert wine of this quality!

Vinification
Taking care to preserve all aromas we manufacutred the fruits very gently. The juice was fermented cold and aged in stainless steel tanks.

Viticulture
The fruits are from different vineyard sites around Bischoffingen with Loess and Volcanic soil. We strictly reduced the crop, cutting down excessive fruits to ensure our high quality level.  All our fruits are picked manualy. 2015 was a great vintage. Beautiful hot summer followed by a dry autumn. Perfect conditions for a great vintage.

Vinification
A gentle whole cluster press removed juice from the skins and seeds. 90% was cold fermented in stainless steel, the remaining 10% was fermented in oak.

Kaiserstuhl - Weingut Karl H. Johner - Fagrance like a fine chocolate maker portfolio. Accompanied by cooked yellow stone fruit and a scent of fresh salty sea breeze. With a little time in the glass then apple-pear compote, some dough, oak and marzipan aromas. On the palate an explosion Pleasant wood in all its variations, accompanied by apple-pear compote, subtle grapefruit incl. peel and again the chocolate portfolio. The acidity is pleasant, the wine appears slim and elegant despite its enormous fullness. Great minerality which rather surpasses the creaminess. Nice long finish full of complex aromas.

Viticulture
The fruits are from our oldest vineyard from the Bischoffinger Steinbuck (over 40 years old) with volcanic soil. Only a strict vineyard management ensures to vinify a wine of extraordinary quality. We strictly reduce the crop to one grape per shoot.

Vinification
Perfect ripe grapes were hand-picked and sorted. A whole cluster pressing gently removed the juice from the skins and seeds, preserving the fresh and vivid fruit flavors. 50% was fermented in stainless steel, 25% in new oak and 25% in used oak. A long aging on the lees intensified the elegant and mellow taste.

Kaiserstuhl - Weingut Karl H. Johner - Complex scent of red cherries, ripe cranberry and some forest floor. In addition very discreet well integrated wood. On the palate for its price surprisingly full-bodied, compared to the 2016 Blauer Spätburgunder slimmer and somewhat more acidic. The tannin is subtle and only a little astringent. Very beautiful and elegant wine with a subtle finish.

Dark, juicy fruit on the palate. Full bodied. Juicy ripe soft tannins. Pleasant harmonious acidity. Long finish. Potential for many years. Everybody's Darling.

Vinification
Intensive green harvest. Harvested by hand. 100% destemmed. Intensive single-berry sorting on the sorting belt. Skin contact fermentation and maceration for 3 weeks. Storage time in used oak barrels : 24 months. Malolactic fermentation.

Maturation
Already beautiful to drink now. Thanks to screw caps it can be stored for a very long time (10 years+)
