Vermouth di Torino – Red

VERMOUTH is the best known and appreciated Italian flavoured wine.
Its production dates back to the eighteenth century with the first celebrations of the rite of aperitifs in Turin in particular, but in general there were many producers throughout Piedmont; the consumption of Vermouth became a real lifestyle.
The recipe of Vermouth di Torino offered by our distillery reproduces what was the real vermouth from its origins and is obtained with the wine produced by the vineyards of our farm consisting of multiple types of grapes called uvaggi, or blends of grapes, to which wisely dosed herbs and spices are added in order to obtain this fabulous and inimitable product typical of Piedmont.

Rum Gran Reserve

We import this special Rum aged for 5 years in French Guiana in American bourbon barrels and then transferred to Scotland, where it is poured for the next 5 years in Porto and Sherry used barrels. This allows the product to release strong hints of vanilla, chocolate and tobacco.

San Felice Liquor

The recipe dates back to 1891, created and used by Grandfather Felice Dellavalle, a renowned and successful herbalist.

Ciqulata Liqueur

Born from the collaboration between Master Chocolatier Silvio Bessone and the Master Distiller Roberto Dellavalle who, as well as being friends, have a common love and creativity to want to bring healthy, genuine products of past times to our present palates.
“Ciqulata” is a fine chocolate-based liqueur, with an alcohol content of 16 per cent, obtained by blending the best selection of finest chocolate with hydrated alcohol and grappa, sugar and skimmed milk. It is a highly versatile product that can be served at room temperature or as a topping for ice-cream.

Ice Grappa

Procedure
Ice Grappa is made with a traditional procedure that can be described in three phases:
1) Pancalieri Peppermint leaves (Italo-Mithcam Botanic Variety), are infused with the grappa. After 60 days, the grappa is separated from the leaves which are pressed to best extract the oil contained in the plant. The liquid obtained by the pressing is added to the grappa that had been previously separated from
the leaves;
2) The second procedure involves the re-distillation of the above product with a discontinued method and at a low temperature, in order to avoid excessive evaporation of the extracted aromatic part;
3) The third procedure involves refrigeration and filtration.
Organoleptic characteristics:
1) Colour: The grappa is transparent and has an alcohol content of 38% vol;
2) Aroma: you can appreciate the freshness of the grappa together with a delicate, sweet hint of menthol on the nose;
3) How to serve: This grappa must be served at a temperature of 4-6°C. At this temperature, the product’s organoleptic expansion can be best enjoyed with its surprising aftertaste and high sensation of freshness.
Little-known fact:
Pancalieri is a small municipality in the province of Turin, at the foot of the Alps, where they have always cultivated peppermint – known and appreciated throughout the world.
The excellent characteristics of the land and the perfect micro-climate make this area the perfect place for this kind of cultivation.

Grappa Riserva aged 15 years

This great Grappa is obtained from the distillation of our best pomace coming from the most suitable areas of Monferrato.
Bain-marie distillation in small stills, then aging for a long time in French oak barrels.
On the nose it is characterised by hints of toasted wood and vanilla; dry and persistent, dominated by notes of tobacco.

The history of the Della Valle Distillery starts in 1983 in Vigliano d’Asti, in the heart of Piedmont’s wine-producing tradition.
Having built up a long experience in the sector, the dream of Roberto della Valle, passionate oenologist and expert of the world of wine and grappa, comes true. Technique, knowledge, innovation, specific market research: these are just some of the main characteristics that have allowed the Della Valle Distillery to grow exponentially, while maintaining the prestigious label of excellent artisan company. An artisan tradition that is currently finding its continuity in the next generation of his children, Lorenzo and Federica, without forgetting the importance of Roberto’s wife and mother to his children, Paola’s support as the company grew, always present within the company. The purpose is the same: to produce and market niche products based on the clients’ needs.
The company uses a discontinuous bain-marie distillation system to produce distillates from an expert selection of fresh marcs. Ageing is the main technique that distinguishes this company because, as well as the 18 month ageing in oak barriques, there is also a unique technique used to age Grappa di Barbera for a total of 10 years in barriques that were previously used to age Marsala, Passito di Pantelleria, Port, Whiskey, Picolit and Malvasia delle Lipari; in this way, the product in the barriques extracts a large part of the main fragrances contained within the cracks of the wood, giving the grappa extremely distinctive scents and tastes.
