Bajoflor 2|0

Bajoflor 2/0 has aged for two years under a flower veil made from the yeasts grown in our vineyard. A layer of lavender, poppies and wild clovers covers our earth and feeds our vines. The intriguing “solera” system mixes very old wines with younger wines thus mothering the young wines. Bajoflor 2/0 wine, with its dryness, saltiness and freshness, pairs with hors d’oeuvres, raw fish, seaweed, soy sauce and sesame based dishes.

Organic Oloroso wine that has aged for six years in oak barrels in an oxidative process that lends the wine its rich color and flavor. A layer of lavender, poppies and wild clovers feeds our vines. The intriguing “solera” system mixes very old wines with younger wines thus mothering the young wines.

Bajoflor 0/6 pairs with barbequed vegetables and meats, steaks, marinated dishes, red meat stews, smoked fish, cured cheese and vinaigrettes.

Bajoflor 5|3

Amontillado organic wine that has aged in oak barrels for five years under a «velo de flor (flower veil)» made from the native yeasts grown in our vineyard. Afterwards, the flor disappears and the wine is exposed to oxidation for three more years. The intriguing “solera” system mixes very old wines with younger wines thus mothering the young wines. An unique experience of maturity and freshness.

Bajoflor 5/3 pairs with spiced salads, salmon, tuna, sardines, trout, succulent soups and stews.

Organic Pedro Ximénez sun-dried grape wine.

After harvest, grapes are exposed to the sun and turned around by hand every day until they become raisins. In the winery, the raisined grapes are spread out in mats and a hydraulic press extracts the must. At that moment an impressive range of aromas floods the entire winery with cherry resin, quince jellies and honey.

Company details

The Robles family has been dedicated to wine making in Montilla (Southern Spain) since 1927. In the late 1990s, the third generation takes over the winery and understands the need to incorporate organic viticulture and work with indigenous yeasts into the tradition of the winery.
