Handpicked into small boxes. Manual selection of bunches on the sorting table. Complete stalk removal followed by gentle crushing. Spontaneous co-fermentation in open tread granite tanks (lagares), with smooth daily pigeage or pumping over. Post-fermentation maceration.
Touriga Nacional, Tinta Roriz, Jaen, Alfocheiro.
Aged in 5000 ltrs cement vats for 12 months.
Total Acidity: 5,5 gr/l
Reducing Sugar: 1,6 gr/l
Its personality and complexity results from the climatic conditions, the selection of the best estate grapes and the creativity of our winemaker. Soils are granite dominated sands. Between elevation and river driven humidity, Daos wide diurnal temperature shifts (20º+) ensure both white and red wines are endowed ample natural acidity. Dao wines are renowned throughout Portugal for their “freshness”. Average age of vines: 9 years.
