A NATURAL AND GROUNDED HARMONY
The old winery was totally reconstructed always keeping in mind the necessity to create an atmosphere which would integrate the old granite walls with the wood barrels and the modern equipment in stainless steel.
Both projects are now concluded, which involved the full reconstruction of the warehouse, where contemporary aesthetics and functionality is blended with the conservation aims, through wooden floors, antique furniture and framed photographs of the Cálem family ancestors, a reminder of the places heritage.
The five existing granite winepresses were subdivided to create nine using the same approach of incorporating modern winemaking technology with the preservation of old stone carving techniques for the wine outlets in the granite.
The winemaking tanks and equipment are stored in an area below the winepresses. Three double tanks for the preparation of white and rose wine, were custom made to take full advantage of the existing space.
A third area within the winery holds the barrel room, where both red and white wines are aged in French Oak barrels, stored in the traditional wedge tradition.
There is now a third building which was reconverted for tastings and meals with friends and clients, with a breathtaking view over the river and a semi-industrial kitchen which was built for that effect.
