Vinification
Selection of the best grapes, vinified variety by variety. Touriga Nacional is fermented in “vinimatics”, while Alicante Bouschet is fermented in open vats (lagares) with mechanical press. The process occurs at a controlled temperature of 22º to 24ºC.

Hints of tropical flavours, associated with the lush freshness of green tea. Great mouth feel lends the wine a sense of elegance, the silky tannins from the hungarian oak merge with the sweet and tropical notes from the grape varieties.
Vinification
The grapes are destemmed and sent to “vinimatics” for 6 to 10 hours at 12ºC. Then they are pressed and sent to a refrigerated chamber for fermentation at 10º to 12ºC.

10 Months in new Hungarian oak barrels

Using the aromatic potencial of Aragonez, this wine features, aromas of Grey Tea, mint, lemon and sage. In the mouth becames fresh with good acidity, and a very elegant final structure.
Vinification
The best grapes of Aragonez, and the night originated this wine - Invisível (Invisible). The must is transported in refrigerated truck’s to the winery. Then, is driven by gravity into the cold chamber, where it remains to decant for 24 hours at low temperatures. After this process, the must is inoculated with selected yeasts and the fermentation takes place at controlled temperature of 12ºC for 15 days.

Elaborated from 4 grape varieties, which celebrate the 4 generations Ervideira. The bottles spent 9 months at the bottom of the largest lake in Europe. The result is a citric colored sparkling that releases a fresh flavour. In the mouth reveals a thin, persistent and very elegant bubble.
Vinification
The basis of this sparkling wine is vinified variety by variety. The alcoholic fermentation takes place in steel deposits at controlled temperature. The second fermentation takes place in the calm waters of Alqueva, where it maturated for 9 months in unique and excelent conditions at 30 m deep.

With the aromatic potencial of Aragonez and Alfrocheiro, this sparkling wine presents a rich aroma of plums and fresh cherrys, with a pleasant mineral touch. In mouth is balance, with a thin bubble, and excellent acidity.
Vinification
The grapes fermented separately, being sent to “vinimatics”, were it stays 4 hours, in slow rotation, to obtain a smooth colour extraction. After this period the alcoholic fermentation occurs in inox deposits. The second fermentation takes place in the bottle, were stays 24 months until “degorgement”.

Vinification
Hand picking, from previously selected fields, of the most southern vineyards of the property. Vineyards with more maturity, age and low yields. Alcoholic fermentation in fermentation wineries and French oak barrels. Prolonged ageing for a minimum of 24 months in new barrels and a later stage in the bottle.

Company details

Behind every Ervideira wine, there is a history. Theses wines are a tribute to a man who loved and respected the land, the sun, the vineyard and the wine.

We create wines with character, structure and complexity, to match with elegance, softness and subtlety – characteristics of Count D’Ervideira himself!

Today, the average annual production is around 800,000 bottles of wine, obtained exclusively from the grapes harvested in our vineyards. The vineyards are planted in the sub-regions of Reguengos de Monsaraz and Vidigueira.
Besides the representation in the nacional market, Ervideira also exports to more than 20 countries around the world.

In Ervideira we are all colleagues and we are all invited to work with passion, dedication and innovation.
