• hand-harvested grapes gently destemmed then chilled for seven days in open top vessels • warmed for a fast ferment; the wine was pressed directly into dedicated Pinot Noir French oak barriques for the winter • malolactic fermentation once the temperatures started to warm again in spring • rigorous blending and barrel section, with the final blend left to settle for a few more months before being bottled without the need for fining or filtration

Kono NZ LP Tohu Awatere Valley Pinot Noir 2018

Marlborough - A bright ruby hue in the glass, this Awatere Valley Pinot Noir displays aromatic layers of red fruit and spicy florals with hints of crushed herbs. The palate is smoothly textured with flavours of bright cherry, red berries and finely integrated French oak. Mid-weight on the palate, this wine is balanced with refined silky tannins that lead to a long and elegant finish.

Vinification
Grapes for this wine are handpicked at optimal ripeness before being transported back to the winery for processing. Once at the winery the fruit is gently destemmed and then lightly crushed using state of the art processing equipment. Batch fermented according to block and clone in small open top fermenters, the must undergoes a cold soak lasting around 7 days before being warmed and inoculated either with selected yeasts or left to undergo a ‘wild’ ferment using indigenous yeasts found naturally on the grapes. Once fermentation is complete the wine undergoes a short period of post-fermentation maturation on skins before being pressed directly to a combination old and new French barriques. These barrels are kept cool in a temperature-controlled cellar over the winter months, before being warmed in spring, allowing the wine to undergo a secondary malolactic fermentation. Barrels are carefully monitored over this period and once the malolactic fermentation is determined to be 100% complete the final blend is carefully put together before being filtered and bottled in late March.

Kono NZ LP Tohu Wairau Valley Chardonnay 2018

Marlborough - Untouched by oak, this richly textured Marlborough Chardonnay displays aromas of ripe nectarine, melon and bright citrus underpinned by complex nutty butterscotch gained from both extended time on lees and malolactic fermentation. On the palate fresh flavours of peach and tropical fruit are balanced with subtle creaminess and great length; leading to a smooth, fresh and focused finish.

Vinification
Machine harvested and fully fermented and aged in temperature controlled stainless steel tanks, this wine has been created to allow the fresh complexities of the fruit to shine through without the need for any oak influence. After harvesting the grapes for this wine were transported a short distance to the winery before being gently pressed. Cold settled over 48 hours, the resulting clear juice was racked into tanks for inoculation with yeast carefully selected to retain fruit purity. After fermentation at reasonably cool temperatures, the wine then underwent secondary malo-lactic fermentation before being aged in tank. Lees stirring was employed to build texture and complexity while still retaining fruit freshness, before being filtered and bottled in February 2019 without the need for any fining.

• harvested using a modern machine harvester in the early morning when the grapes were cool • pressed into stainless steel tanks for cold settling, before being gently racked and inoculated with a select yeast to naturally enhance the aromatic and flavour profiles of the wine • fermentation was carried out at a cool temperature lasting 21 days until cool stopped • left to settle on yeast lees for a short period before being racked again into stainless steel tanks for maturation, ready for bottling without the need for fining • bottled December 2018 – 12,000 bottles produced

Vinification
Select blocks from the Awatere Valley are harvested using modern machine harvesters allowing ultimate extraction of flavour and aroma compounds from the skins of the grapes. Once at the winery the grapes are pressed into stainless steel tanks for cold settling, before being gently racked and inoculated with select yeasts chosen to naturally enhance the aromatic and flavour profiles of the wine. Fermentation is carried out at cool temperatures allowing the wine to retain its bright aromas; with each batch fermentation typically lasting around 21 days. After fermentation is complete the wines are left to settle on their yeast lees for a short period before being racked again into stainless steel tanks for maturation. Meticulous classification of each batch results in a final blend that truly captures the exceptional characteristics of the vineyards. Once blended the resulting wine is stabilised and filtered without the need for fining, ready for bottling in mid-July 2019.

Vinification
Machine harvested grapes are transported to our winery located in Marlborough’s Awatere Valley. Once at the winery the grapes are pressed in modern membrane presses, with both the free-run and harder pressings combined in stainless steel tanks then chilled and settled until clear. The juice is then racked and warmed before being inoculated with selected yeast cultures. The ferments are controlled through temperature manipulation and stopped with just a very small amount of residual sweetness. Blending occurs in early June, after which the resulting wine is stabilized and filtered without the need for fining, ready for bottling in early July.

Kono NZ LP Tohu Awatere Valley Pinot Gris 2019

Marlborough - A complex and fruit-driven Pinot Gris from Marlborough’s Awatere Valley, this wine shows aromas of juicy pear and citrus blossom leading to a palate of fresh quince, golden apple, and hints of sweet spice. With integrated fine phenolics and smooth acidity this is a fresh and richly textured wine with a long and lingering finish.

Vinification
Grapes sourced from a number of prime sites in the Awatere Valley are gently pressed once at the winery to obtain beautifully clear free-run juice, with the harder pressings keep separate and allowed to oxidise and soften phenolics before being re-combined with the free-run. The juice is then settled and racked into stainless steel tanks for warming and inoculation with carefully selected yeasts. Fermentation is carried out at cool temperatures of around 10-13°C to help preserve the fruity characters and lasts around 21 days until the balance of residual sugar and acidity/phenolics has reached the ideal point. Post-ferment the wine is held in tank and matured for a short period of time before being stabilised ready for bottling. With no additional finings judged necessary, this wine was ready for bottling in early July 2019.
