CADÃO DOURO RESERVA RED

Region of origin – Douro | Portugal
Climate
Resulting from a predominantly continental climate with cold winters followed by very hot summers.
Location of Vines -Douro (DOC)
Soils
Precambrian and antediluvian schists, with some narrow granite seams.
Varieties
Touriga Nacional, Touriga Franca and Tinta Roriz.
Vinification
Manually harvest to ensure the most careful selection of only the ripest bunches of grapes. Pelicular maceration and alcoholic fermentation at controlled temperatures in stainless steel cubes. Post-fermentation maceration followed by malolactic fermentation. Minimum ageing of three years before bottling.
Tasting Notes
A closed ruby colour with flashes of violet, aroma of red and black fruit preserves, with balsamic touches and hints of toast, vanilla and chocolate, structured and dense but simultaneously elegantly smooth and very persistent.
Alcohol – 14 % vol.
Gastronomy
Ideal for meat and game dishes, cheeses, traditional Portuguese food and Mediterranean cuisine generally
Recommended temperature between 18º-20°C.

CADÃO DOURO TOURIGA NACIONAL RESERVA

Mostly a continental climate with very cold winters and very hot summers.
Location of the vineyard– Douro (DOC)
Grounds
Schist pre-Cambrian, and archaic, with some granitic spots.
Castes
Touriga Nacional, coming from our own vineyards, with different altitudes and expositions.
Wine Making
Manual grape picking, with good maturation criteria where the grapes are carefully selected. Cold pre-fermentation maceration, alcoholic fermentation with temperature control in stainless steel tanks. Long post-fermentation maceration with malolactic fermentation in the grapes. Vinified with all the necessary care to preserve the typicality of the grape varieties and brief stage in French oak to enhance its complexity.
To preserve intact the quality of this wine we do not stabilize by cold, it is a natural product subject to deposit with age.
Tasting Notes
Bright, intense ruby color, fresh but dense and velvety, a perfect harmony where the wild fruits of the Douro and the violets typical of the grape variety are mixed and some toasted notes. It is a sophisticated Touriga Nacional, very elegant, with ripe tannins, exuberant and with excellent persistence.
A pleasure for the senses.
Alcohol – 15 % vol.
Gastronomy
Ideal for meats and hunted meats, cheeses, typical Portuguese food, Mediterranean.
Recommended temperature 18-20ºC

CADÃO ESPUMANTE

Region of origin – Douro | Portugal
Climate
Resulting from a predominantly continental climate with cold winters followed by very hot summers.
Soils
Precambrian schists.
Location of vines – Douro Superior
Varieties
100% Touriga Nacional.
Vinification
Manual harvest to the box, with optimum ripeness criteria since the sharp altitude is decisive at this stage. Alcoholic fermentation in stainless steel tanks with controlled temperature at 16-18 ° C. Second fermentation carried out in a bottle according to the champagne method, followed by a minimum stage of 9 months in the bottle.
Tasting Notes
Blanc Noir presents a citrus color of floral aroma. In the mouth has a fresh and elegant attack, has a very fine and persistent bubble.
The palate reveals light and complex flavors of wild fruits and a pleasant balance of very balanced acidity. A persistent, well-integrated mousse.
Alcohol –12.5 % vol.
Gastronomy
Great for starters, salads, light grills and fish. Perfect to accompany appetizers and seafood. It is also one of the few that perfectly match with sushi.

CADÃO PM VINHAS VELHAS

Varieties
Produced from wines aged for a period of over sixty years and all typical of the DOURO and blended in batches.
Vinification
Manually harvested with the bunches carefully selected in accordance with the highest standards of ripeness. Pellicular maceration and alcoholic fermentation at controlled temperatures in stainless steel cubes. Post-fermentation maceration followed by malolatic fermentation.  Vinified with all of the attention needed to preserve the special features of these varieties and aged for twelve months in French oak casks before another six months in the bottle. In order to intactly pre erve the quality of this wine, we do not cold stabilize it and thus this is a natural product subject to sediments emerging with age.
Tasting Notes
Clear and brilliant, an intense ruby colour with an excellent aromatic complexity that combines the wild fruit berries of the Douro with heather in harmony with hints of toast and chocolate. Structured and dense but very elegant, rendering a highly pleasing effect through mature tannins and a velvety finish, exuberant and with an excellently persistent aftertaste.
Alcohol– 14.5 % vol.
Gastronomy
Ideal for meat and game dishes, cheeses, traditional Portuguese food and Mediterranean cuisine generally.
Recommended temperature  18º-20ºC

CADÃO VINHAS VELHAS

Varieties
CADÃO – AGED VINEYARDS – GREAT CHOICE, coming from vineyards over 75 years old and a variety of more than 37 typical grape varieties of DOURO.
Vinification
Manual harvesting and picking only those fully ripe and with the careful selection of the bunches. Pelicular maceration and alcoholic fermentation at controlled temperatures in stainless steel cubes. Post-fermentation maceration followed by malolactic fermentation.
Vinification with every care necessary to fully preserving its uniqueness and aged for eighteen months in French oak casks before a further six months in the bottle. In order to preserve the quality of this wine intact, there is no cold stabilisation process and, hence, as a natural product, the wine may contain sediment with age.
Tasting Notes
A brilliant clear purple color, good sensation of aromatic freshness, notes of an excellent complexity that recall the wild berries of the Douro, heather and touches of violet, balsamic alongside hints of toast and chocolate.
Structured and dense but highly elegant. Well integrated, full bodied with mature tannins and a silky finish, exuberant and with excellent persistence.
Alcohol– 15 % vol.

Highly versatile and great with fish, shellfish, barbecues or on its own as an aperitif.

This is a dense but simultaneously elegant, smooth and persistent wine in a set that calls out for drinking in good company.
