Grapes manually harvested in 20 Kg cases. Destalked grapes are macerated for 6 hours at 8ºC. The must is pressed and immediately racked. Fermentation takes place in stainless steel tanks for approximately 3 weeks at low temperatures to preserve the characteristic aromas. Musts from different varieties are fermented separately and later the final blend is determined by tasting.

Yellow straw colour with greenish hues, very bright. On the nose the wine has medium-high intensity with floral and fruity notes and fresh herbs. Citrus and creamy aromas typical of Albariño, combined with green apple characters from Treixadura; with herb, balsamic and gently smoky notes from the aromatic Loureiro. On the palate the wine is fresh and balanced, with well integrated acidity and full fruity flavours. Minerality and zesty citrus notes on the finish cleanse the palate… ready for the next sip.

The grapes were harvested in the middle of September, after having heavily monitored and followed the ripening process in the vineyards. The different vineyards are harvested separately according to ripeness. The grapes get to the winery, and are slightly pressed, being only the gravity most or “mosto flor”, the one to be fermented. No selected yeasts have been added.

It has a straw-yellow colour with green hues. In the nose, it is very powerful and aromatic, showing aromas of herbs and white fruits. In the mouth, it is very fresh and with good body, with a bitter but pleasant finish, and long aftertaste.

A pre-fermentation cold soak (16ºC) for 4 days, then temperature-controlled alcoholic fermentation at 26ºC for a further 8 days before the wine is run off its skins. Malolactic fermentation with selected bacterial strains in stainless steel vats. Mixed ageing in second-fill American and French oak barrels (70% and 30% respectively) for 4 months.

A cherry-red colour with a garnet rim and ruby glints. Slow-trickling fine, clean tears. A complex nose with a harmonious mingling of black fruit and sweet spices, together with vanilla notes. On swirling, red berry fruit aromas gradually come through with hints of forest floor and damp earth. Flavoursome, fresh and slightly balsamic on the palate with good body and a good presence of ripe tannins. A lingering spicy finish.

PASIÓN de Bobal Red

The harvest is done manually in small cases at the end of October, with a later selection of grapes at the reception in the cellar. Long and very careful maceration at low temperature before the fermentation. Also the start of the alcoholic fermentation is done at low temperatures, then letting the temperature go higher. After this process, the malolactic fermentation takes place in French-oak barriques, 100% first year. Then, the wine is aged in these barriques for another 6 months until its bottling.

It is a dark-cherry coloured red wine, very intense in colour, and with purple hints. In the nose, it shows very clean aromas of red and black fruits, strawberries, raspberries, cassis, very well balanced with creamy and pleasant toasted notes from the barrique. It also shows a slightly spicy touch of liquorice. In the mouth, it is rich, fruity with round and ripe tannins. It has a good acidity, and shows nice notes of vanilla, smoke and coffee. A powerful wine but with a very elegant balance.

PASIÓN de Moscatel White

Prefermentative cold maceration during 12 hours. Soft pressing in order to obtain the must. Static racking and later alcoholic fermentation at a controlled temperature of about 14 ºC. After this process, the wine is aged with its fine lees until bottling.

Pale straw-colour, of an endless freshness, it has an exquisite aroma, typical characteristics from the Muscat variety, with floral hints, white flowers and fruity notes of peach and green apple. In the mouth, it is fruity, dry and with a good acidity, it is full
bodied, and it really leaves a very rich mouth feel with a nice ending and recalling aftertaste.
