Valmoro Toro

D.O.: Toro.
Type of wine: Red, aged.
Aging: One year in French and American oak casks
Grape Variety: Old-vines “Tinta de Toro” / Tempranillo.
Bottle Type: Bordelais.
Capacity: 75 cl.
Closure:Natural cork.
Case Format: 6 Bottles.
Tasting Note:
Deep-cherry, garnet rimmed. Full nose of preserved fruit, lightly spiced,
dark-chocolate hints, warm and character-full. In the mouth:
concentrated, full-flavoured, unctuous, with mature tannins, good
acidity, balanced and persistent. Delicious.
Enjoy best:
Red meat, game casseroles, pulse-based dishes, “jamon Serrano” and
cured-meats, braised pork or veal cheek
Drinking best:
Up to three years from release
Technical information:
Hand harvested during the second week of October in small, 20 kg.
The grapes are carefully selected for ripeness, potential alcohol between
13 and 14 degrees and excellent health.
he vineyard is over 25 years old.
Cool, pre-fermentation maceration in 15.000 litre tanks, with regular
pumping over.
Once fermentation begins, the cap is also regularly pierced, and the
fermenting juice sprayed over.
The temperature of fermentation is 25 to 27OC, and is followed by a
25 day maceration period.
Spontaneous malolactic fermentation, immediately following the alcoholic
fermentation, lasting around 15 days.

Tasting Note:
Bright straw. Full, very expressive nose of ripe fruit with tropicalfruit
notes, touches of sweet spice and cocoa hints. Full flavoured,
fruited, unctuous, excellent acidity; long.
Best enjoyed:
Fresh and semi-cured cheeses, mixed salads, poultry, fish, seafood,
rice dishes
Drinking best:
Up to three years from release
Technical information:
Old-vines Verdejo, lees-fermented in new barrels of French and
American oak. Lees stirred fortnightly. Twelve months in barrel
followed by a further twelve in bottle before release.
Alcohol:13% Vol.
Residual Sugar: 2,5 g/l

Tasting Note:
Straw-yellow with green touches, lustrous. Forward nose,
intensely fruited: floral base with citrus overtones. In the
mouth: fresh, structured, balanced acidity and flavourful; very
long, with a pleasing hint of bitterness to finish.
Best enjoyed:
Excellent aperitif and as an accompaniment to salads, uncured
cheeses and spreads, fish, seafood, and rice dishes, etc.
