Starmont Winery Chardonnay, Carneros 2017

Los Carneros - The fruit was handpicked, as well as state-of-the-art machine harvested, then carefully sorted at the winery. Traditional methods are used—aging sur lies for 10 months in 20% new French oak to add richness and partial malolactic fermentation to balance the wine’s acidity. A combination of barrel fermentation (60%) and stainless steel tank fermentation (40%) was used with the goal of providing a complex and interesting Chardonnay that maintains a varietal correctness and sense of place. A crisp and refreshing Chardonnay from Carneros that will gain complexity for three years from vintage.

Merryvale Vineyards Cabernet Sauvignon, Napa Valley 2016

Napa Valley - Drawn from three top Napa vineyards: Stagecoach, Hardman and Rancho Chimiles with each vineyard fermented separately in small tanks. Native fermentation started after a 5-day cold soak and reached a peak temperature of 90°F. The wines were pumped over a few times a day until dry and then pressed and drained to barrels where malolactic fermentation occurred. Aged in 50% new medium toast French oak barrels, the wine matures for 22 months before being bottled unfined and unfiltered.
