The Kardasi tsipouro from Tirnavos is produced from grapes coming from our privately-owned vineyards. There we cultivate the “black muscat”, a grape variety with rich characteristics and distinguished aroma, thriving only in the region of Tirnavos. The grapes are brought into the winery only after a thorough monitoring and sorting are conducted.
The production is carried out in modern copper stills under the double distillation method.
The 100% natural grape distillate is slowly distilled at a controlled temperature.
The first fractions of the distillation (heads) and the last ones (tails) are removed and separated out from the main distillate.
The total main distillate is redistillated at a low temperature.
The final distillate is collected and stored in stainless steel tanks for a few months, in order to be homogenised and acquire balanced aromas.
Then, it is diluted at a desired temperature, filtered and bottled.
The Tsipouro without anise is the distillate, in which the aromas of the grapes used for its production can be easily recognised.
In this particular tsipouro, the aroma of the black muscat and the aromas of blossomed rose, caramel and butter can be highly distinguished. Its taste is soft and fruity. It is consumable without water at 12-15°C, accompanied by traditional Greek delicacies (meat, pickles and spicy salads).
As regards the Tsipouro without anise, the anise and fennel seeds are added in it in the second stage of the redistillation. In this tsipouro dominates the aroma of anise, leaving a light tingle on tongue and a sweet aftertaste. It is served with cold water or ice cubes, accompanied by cool Greek salads and seafood.
TSIPOURO AGED KARDASI
The Aged Tsipouro Kardasi is a fine distillate from black muscat grapes, aged in French and American oak barrels. The distillate remains in the barrels for a period of 18 – 24 months. The residence time depends on the type and the level of burning of the barrel.
The ageing process changes the nature of tsipouro, giving it finer aromas, a richer taste and a very intense aftertaste.
The final blend constitutes an exceptional distillate, soft and full, which surprises pleasantly.
In it dominate aromas of fresh fruit, vanilla, citrus fruits, as well as of spices, mocha chocolate and a smoky aroma.
It is consumable without water, at a low temperature, in a distillate glass (tulip glass) as a digestif after a good meal.
It can also be served in an old-fashioned glass, at a cool temperature, accompanied by spicy nuts or dried fruits (prunes, apricots, figs etc.).
It goes best with bitter chocolate with orange filling.
It can also be used as a base for imaginative cocktails.
The Kardasi ouzo is produced according to a traditional recipe, owned by the family since 1914. The secret of this recipe is the combination of 15 aromatic seeds and herbs, some of which are extremely rare, in balanced proportions. This sweetness characterising the KARDASI OUZO is attributed precisely to the use of these herbs, since it doesnt contain any sugar. This extract of seeds and herbs of superior quality is distilled in a small copper pot still, manufactured by Greek craftsmen in Istanbul. The distillation process is done slowly, almost mystically. The distillate is collected and, after being diluted, is stored in stainless steel tanks for a short period, until the aromas are balanced. Then, it is filtered and bottled.
The soft taste and the intense aromas of anise, cinnamon, bitter almond and nutmeg (and not just these) are characterising OUZO KARDASI.
Υou can drink it with cold water or ice cubes, accompanied by fresh salads, seafood or spice foods of Mediterranean cuisine.
The AUTHENTIC KARDASI BRANDY is an exceptional spirituous beverage, resulting from the three-generation experience and expertise of the Kardasi family. The aromas of vanilla and burnt oak wood dominate in it. Enjoy it after a good supper or try it with ice cubes
The Botanic Liqueur by the Kardasis family is produced with the extraction of aromatic herbs, seeds and fruits.
It is a restorative and particularly digestive liqueur, for the production of which Greek and international herbs (some of which extremely rare) are used.
The intense aromas of citrus fruits, sage, cloves, cinnamon and bitter orange are particularly pleasant for the nose.
Sweet touch at first, bitter finish, accompanied by an explosion of its botanic aromas.
It is served as an aperitif, without water or with a slice of orange, or as a digestif, after a meal.
You can also savour it with soda, tonic and ice or you can add it in cocktails.
The beneficial, medicinal and therapeutic properties of mastic have been known since ancient times.
The tear of the pistacia lentiscus (pistacia lentiscus var. Chia), derived exclusively from the tree of the pistacio genus, cultivated on the Greek island of Chios and nowhere else in the world, is patiently and with a great deal of effort collected by the local growers.
The Mastic Liqueur by the Kardasis family is produced from this particular tear. The Mastic Liqueur pleasantly brings out the unique mastic aroma and, in combination with its sweet and crystal taste, serves as an excellent aperitif.
It is served iced, without water or with a slice of lime, before or after a meal, or can be used to make unique cocktails.
