DRY WHITE WINE, PDO SANTORINI, 100% ASSYRTIKO
Classic white vinification, partial pre-fermentation cold soak. Only free-run juice ferments in steel tanks under controlled temperature by selected neutral and indigenous yeasts. Approximately 10% of the wine ferments in oak. Minimalistic winemaking approach is followed during all stages of production. Sur-lie ageing for at least 8 months, under frequent lees stirring.
