Kechribari

A benchmark for retsina since 1939. The only wine in this price category with more than 35 international awards. The retsina for those who know how to enjoy it.

Vinification/Aging: Typical white vinification in stainless steel tanks at strictly controlled temperature, with addition of a small quantity of top-quality fresh pine resin during the alcoholic fermentation. 

Tasting notes: Pale yellow with greenish hues. Aromas of pear, green apple and melon, with notes of lime, Chios mastic and fresh pine resin. Intensely aromatic and well-balanced, hits the mouth with a taste of Greek summer.

Food pairing: Greek and Mediterranean mezes, vegetarian dishes rich in olive oil, pan-fried, grilled or spit-roasted meat, small fried fish, anchovies and feta cheese with olive oil and oregano.

Tear of the Pine

The retsina that changed the perception about the whole category, placing traditional Greek wine among the finest products of the international vineyard. This is the first retsina with an impressive aging potential.

Vinification/Aging: Alcoholic fermentation in new oak barrels of various types from different regions and maturation for 6 months on fine lees.

Tasting notes: Yellow with golden shades. Intense citrus aromas, on a background of vanilla and butter, with botanical notes of rosemary, thyme and ginger. Explosive fruity aromas, intense mineral character, delicate acidity, with an impressively long aftertaste.

Food pairing: Spaghetti with lobster, seafood cooked with herbs, baked or grilled fatty fish, grilled vegetables, white meat and Mediterranean dishes rich in olive oil, as well as dishes of the Asian cuisine, such as sushi.

Vinification/Aging: Vinification in closed inox tank. Over the short period of the fermentation, the fresh resin extracts its freshness in the wine, which is bottled unfiltered.

Tasting notes: Intensely aromatic, with clear notes of pine resin, but also an extra complexity on the palate, where the pronounced acidity provides balance and a vivid mouthfeel, this pet-nat retsina is capable to offer a unique experience.

Food pairing: A perfect match to any sea food and small fried fish, cured fish, bottarga, but also to the intense flavors of dishes of the Asian cuisine.

Tasting notes: Raspberry with violet hues. Aromas of juicy red fruits and wild strawberries, on a toasty background with spicy nuances and notes of Chios mastic. Intense fruity aromas with notes of pine resin, typical Xinomavro acidity, smooth tannins and refreshing finish.

Food pairing: Grilled mushrooms, seafood, smoked salmon, on its own or with pasta, fish cooked in tomato sauce and olive oil, spit-roasted lamb or lamb cooked in Dutch oven, eggplant or feta cheese.

Vinification/Aging: After a short extraction for a few hours, Xinomavro is transferred to a new tank where it will be vinified together with a small proportion of Gewürztraminer.

Tasting notes: The bright salmon color is a pleasant prelude to the wine’s elegant style. The nose offers seductive aromas of rose petals enhanced with subtle notes of strawberry and cherry. The freshness of the palate balances with the discrete sweetness, creating a wine with a velvety texture and a lingering fruity finish.

Food pairing: Delightful on its own, as a refreshing aperitif, or paired with salads, grilled vegetables, pasta in light red sauces, dishes based on salmon, sweet and sour pork or fruit salads.

Tasting notes: Deep garnet with violet hues. Ripe red fruit, tomato, green pepper and dried plum, with notes of caramel and spices. Velvet and jammy red fruit taste, with rich round tannins and a long spicy aftertaste.

Food pairing: Game, roasted meats with spicy red sauces, meat pies, cold cuts, smoked hard cheese and pastries with bitter chocolate.

Doriki -Green Walnut Liqueur

Production: The liqueur is produced in the traditional way and with home-style care using tender green walnuts, which are picked at the time when their characteristic aroma is at its peak. After the extraction, the liqueur matures for at least 18 months, in order to gain a richer and more complex character.

Aroma/Taste: Lively but fine aromas of fresh green walnuts, a rich taste and a lingering aromatic aftertaste.

Food pairing: Pairs ideally with all chocolate-based desserts, rich white cream desserts, such as kazandibi made from buffalo milk, semolina halvas or an aromatic Greek coffee.

Doriki -Cornelian Cherry Liqueur

Production: The fruit of the wild cornelian cherry, a shrub growing on the slopes of the Northern Greece mountains, is the basis of one of the most traditional Greek liqueurs. The cherries are picked with great care and the liqueur matures for 14-16 months before it is bottled.

Aroma/Taste: Clear and elegant aromas of cornelian cherry followed by a soft and velvety taste, which is underpinned by a balanced sweet and sour finish.

Food pairing: Pairs ideally with fruit, all the traditional Greek desserts, syrup desserts, roasted quince, cream desserts and flavored cakes.
