Bodegas PAGOS DE MOGAR is a family business founded in 2003, under the regulation of the Spanish "Regulatory Council of the Designation of Origin (D.O.) Ribera del Duero". The winery is located in Valbuena de Duero (Valladolid). The building shows an elegant design and is equipped with modern and functional installations.
Our wines are made with the grapes from our own vineyards and besides from vine growers of the neighbourhood that work under our guidelines. The grapes are manually picked in 17 kg plastic crates. All the grapes coming into the winery are carefully examined at the sorting table.
The alcoholic fermentation is made temperature controlled, in stainless steel tanks provided with two cooling jackets. Pumping over and punching down are performed by hand daily during the whole process. Once the fermentation has finished, the wine remains in contact with the skins. The maceration periods are long, according to the characteristics of each wine, but they use to be longer than 20 days. After the runing off, the temperature is controlled around 20ºC, so that the malolactic fermentation takes place in the best conditions.
