Clos Vieux Taillefer 2009

Elected best Merlot in the World at the IWSC-2011 competion

Vintage: 2014
Surface area: 3.80 ha
Terroir: Sandy with iron deposits in the sub-soil
Grape variety proportions: 100 % Merlot
Average age of the vines: 40 years
Average plantation density: 6 600 plants/hectare
Yields: 40 HL/HA
Growing Practices: Soil tilling, leaf thinning and bunch distribution, reasoned culture regarding chemical intervention and fertilizer enrichment.
Harvest: Hand-picked harvest with exacting bunch-by-bunch sorting of grapes at perfect maturity.
Vinification: Thanks to a conveyor, the grapes are moved into small, stainless steel, temperature controlled vats. The extraction is undertaken by gentle punching down of the cap of skins. The wine is then run-off with its lees into barrels to undergoe its malo-lactic fermentations.
Ageing: After the malo-lactic fermentations, the wine is aged over lees in oak barrels for around 14 months.
Food and wine pairings: It will perfectly accompany grilled red meats or stews, game or aged cheeses.
Harvest date: The harvest took place between the 30th of September and the 6th of October 2014.

Les Valentines

For the utmost effeciency and precision, each grape variety is attributed to its own vat. The harvests are undertaken with the help of small crates, the grapes are sorted in the parcels and at the cellar. They are then placed by gravity into 10 to 30 HL wooden vats.  The extraction is effectuated by punching down the cap of skins.  The wine is then run-off together with its lees into oak barrels to undergo the malo-lactic fermentations.

Surface area:  7.30 ha
Terroir: Ancient sand on clay (1.80 ha)
Clay and limestone on slopes and plateaus (5.50 ha)
Grape variety proportions: 90 % Merlot – 10 % Carbernet Franc
Average age of the vines: 40 years
Average plantation density: 7 500 plants/hectare
Yields: 28 HL/HA
Growing Practices: Traditional soil work with no use of herbicide. Suckering, debudding, selection of the bunches as of flowering, leaf thinning in June and August.
Harvest: Sorted in the vineyard before the harvest, the grapes are collected in small crates, are de-stemmed then sorted and not crushed.

Château de Laussac Cuvée la Dame

This wine will perfectly accompany cold cuts, red or white meat, barbecued meats or cheese.

Vintage : AOC Castillon Côtes de Bordeaux
Surface area : 28 ha
Terroir : Sandy silt
Grape Variety proportions : 75 % Merlot | 25 % Carbernet Franc
Average age of the vines: 40 years
Average plantation density: 5 500 plants/hectare
Yields : 50 HL/HA
Growing Practices : Soil work, green harvesting (de-suckering, leaf thinning, bunch distribition) reasoned culture regarding chemical intervention and fertilizer enrichment.
Harvest : Mechanical with fully integrated sorting system then second sorting at reception bay with air-jet system.
Vinification :. The wine is brought in and from above is transferred into small cement tanks that are fully equipped with temperature control. The extraction is undertaken in a traditional manner with pumping over. After the post-fermentation maceration, the wine is run-off.
Ageing : After the Malo-lactic fermentations, the ageing in cement vats takes place for around 10 months.
Food and wine pairings : This wine will perfectly accompany cold cuts, red or white meat, barbecued meats or cheese.
