Vinification
A rosé wine is produced by direct pressing and then matured. Once bottled the second alcoholic fermentation or “prise de mousse” is induced by adding the liqueur de tirage (wine yeast and juice that has been kept cold since the harvest)

Vinification
Both grape varieties are harvested and vinified individually. Harvest is carried out according to rather technical criterial that is linked to the search for a balance of musts between PH, total acidity and phenolic maturity. Totally destemmed. Harvested grapes are chilled before they are pressed. Pressed by vacuum press. Selection of free-run and first juices. Cold settling (15° C constant). The start of fermentation takes place in tanks for 2 days. Then the musts are put separately into oak barrels from the Tronçais forest; barrels are of different ages, from new to 3 years old, with different capacities depending on the grape variety. Thermal regulation of alcoholic fermentation (17°C) for 10 days. Racking after alcoholic fermentation and then maturing in barrels for 5 months with a light manual and regular stirring for about 4 months. Blended at the end of February, treatment by the natural cold temperatures against tartaric precipitations, then filtration. Bottled in mid-March.

This wine is produced from grapes harvested uniquely on the Domaine which is certified organic (ECOCERT) since 1979. Each variety is harvested and vinified seperately. The harvest is carried out respecting technical criteria to determine the perfect balance between the PH, total acidity and the phenolic maturity in the must. Destemmed and cooled before pneumatic pressing at low pressure. The first juices are selected and racked at 15° C. The alcoholic fermentation is regulated at 17° in stainless steel vats. Fining and blending is followed by a cooling technique which prevents any sediment forming. It is then filtered and bottled in mid-february.

The harvest is carried out respecting technical criteria to determine the perfect balance between the PH, total acidity and the phenolic maturity in the must. Destemmed, the grapes are then pneumatically pressed at a low pressure. A selection of the first juices is blended and then racked and casked. For 50% of the juice, fermentation takes place in 300 liters French oak casks (oak from the forest of Tronçais in the Allier region, Nièvre and the Vosges). The wine is then racked and matured for 6-8 months with regular ‘bâtonnage’ or stirring of the lees. Finally it is blended, fined and filtered and is ready for bottling in April.

Vinification
The harvest takes place when the tannins in the grapes reach optimum maturity. The Syrah ripens first and is harvested slightly over ripe as we wait for the mourvèdre to be ready. After destemming, each variety is macerated separately for about 30 days, then fermented for 20 days in stainless steel vats. Pneumatic pressing is followed by selection and blending.

Maturation
Between 6-8 months, in 300 liters medium toast oak casks from Tronçais and the Vosges. It is then racked and bottled.
