Vignobles Bonfils - Capitoul - OROS - rosé 2019

Languedoc AOC - Delicate pale pink with lovely glimmering highlight. The nose is pleasingly complex, with notes of small red fruits evolving to exotic fruit and spicy notes characteristic of the La Clape terroir. Smooth and fresh at the same time, the palate is full of fruit and spices (pepper, ginger) with immense volume and richness thanks to maturing on fine lees.

Blend
80% Grenache, 20% Syrah

Vinification
The grapes are picked during the coolest hours of the night then directly pressed, protected from oxygen, to ensure the optimum preservation of aromas and control the intensity of color. The blending contributes to the aromatic complexity, whilst the terroir expresses spicy and fresh aromas. Ageing on fine lees following alcoholic fermentation creates supplementary aromatic complexity and volume.

Vignobles Bonfils - Capitoul - rosé 2019

Languedoc AOC - Pale pink color with pretty sparkling reflections. Pleasant aromatic complexity on the nose, with notes of small red fruits evolving towards exotic fruits and spices. Round and fresh on the palate, rich in fruity and spicy notes, with a lot of volume and sweetness thanks to the ageing on fine lees.

Vinification
The grapes are harvested at the coolest hours of the night. They are then directly pressed for Grenache and bled for Syrah, away from oxygen, to ensure optimal preservation of the aromas. Settling at low temperature, temperature regulation of must between 14 and 16 °C.

Vignobles Bonfils - Château Vaugelas - Physis 2019

Corbières AOC - A ruby red colour with a beautiful brilliance and purple tints, hinting at the wine's youthfulness. The nose is dominated by intense notes of fresh red fruits such as raspberry or redcurrant. On the palate, the attack is very round, with a sweet mid-palate developing fresh and crispy fruit aromas. The overall balance is on the roundness, the volume and the greediness of the fruit.

Vinification
This Nature et Vegan cuvée was created to sublimate the terroir of Vaugelas by optimising the exceptional natural potential of the estate (soil, subsoil, exposure, climate) while respecting the fauna and flora, from the cultivation of the vines to the bottling. Manual harvesting. No inputs, fermentation thanks to indigenous yeasts naturally present on the skin of the grapes. No sulphite in order not to denature the specificities of the terroir.

Vignobles Bonfils - Domaine de Cibadiès - West Side Chardonnay 2019

IGP Pays d'Oc - Straw yellow in colour with green tints, this wine offers complex and very intense aromas of citrus fruits, peach, apricot and dried fruits, with vanilla and floral notes. Full bodied and harmonious, the palate is smooth and rich with good volume.

Vinification
VINIFICATION The Chardonnay grapes are harvested extra ripe to undergo skin maceration from 6 to 12 hours before being pneumatically pressed. All oxidation is prevented during the winemaking process. Temperature is set around 16°C. The wine is then aged on fine lees for 7 to 8 months for increased aromatic complexity and smoothness on the palate.

Vignobles Bonfils - Château Capitoul - OROS - red 2018

La Clape AOC - Magnificent dense dark red colour. Very spicy nose (white pepper) with touches of black fruits (blackberry). An ample and very long mouth with velvety tannins. This very beautiful wine of the “terroir” of la Clape. expresses by its concentration and its roasted notes all the complexity.

Vinification
The château possesses an ultramodern cellar whose original architectural style is reminiscent of a ship. Syrah and Grenache are the principal components of the blend, which also includes some Carignan. The low yields result in maximum concentration and complexity. The grapes are harvested with great care, with double hand sorting and destemming. After light crushing skin maceration lasts 25 days in 60Hl conical wooden vats, at controlled temperatures – between 22 and 24°. The wine is then matured in French oak barrels of 1wine then in conical wooden vats for 3 to 6 months before bottling.

Vignobles Bonfils - Château Villerambert - Opéra 2018

Minervois AOC - Opera delights the eye with its glimmering ruby robe. Complex fruity notes of strawberry, raspberry and blackberry lifted by a hint of spice reveal this to be a wine of immense character.

50% Grenache, 25% Syrah, 15% Carignan, 10% Mourvèdre

Vinification
VINIFICATION The grapes are night harvested, lightly crushed and passed into vats for a maceration period of 4 weeks, and up to 6 weeks for the most mature Syrah and Grenache. Made in the traditional manner, with the grape varieties being vinified separately, pumping over and racking . The wine is aired and the lees regularly stirred during the whole post fermentation maceration period for greater richness and to soften the tannins. The Grenache is vinified in stainless steel tanks protected from the air, whilst the Syrah and the Carignan benefit from micro-oxygenation to preserve all the fruit aromas. The final blending takes place in June.

Vignobles Bonfils - Château Vaugelas - V 2018

Corbières AOC - Ruby red with aromas of ripe red fruits, dark chocolate and soft spices with a hint of minerality. Soft rounded tannins and well integrated oak create this well rounded wine with a long finish and subtle notes of licorice.

50% Syrah, 35% Grenache, 10% Carignan, 5% Mourvèdre

Vinification
VINIFICATION Each varietal is vinified separately. The majority of the harvest is destemmed and lightly pressed. Temperature controlled fermentation takes place at a maximum of 28°. The cap is constantly punched and the must pumped over. The Carignan part of the blend is vinified using carbonic maceration. This adds structure and aromatic qualities to the final wine. Some of the grape parcels are harvested at different times in order to benefit from optimum ripeness of the grapes. The wine is aged in oak barrels for 11 months.
