Bourgogne Pinot Noir AOC Red PATRICK CLERGET

Vineyard and vines
Côte d’Or and Saône et Loire. The vineyards tend to be located along the foot of the wine-growing slopes on limestone soils mixed with some clays and marls. The soils are stony, rocky even, and quick-draining.

100% Pinot Noir

Traditional

Tasting notes
Colour of medium intensity, purplish in its youth, changing to ruby, and then garnet, after several years in bottle. It shows an impressive array of fragrances, an essential quality of Pinot Noir. Its structure, quite round with moderate tannin, permits early enjoyment, while ensuring good ageing potential. Aroma of red and black fruits, fruity wine, reticent tannins, softening when aging, long on the palate.

Food pairing
You will enjoy it good with grilled or boiled red meats, Farmhouse Roasted chicken, roasts, grilled Tuna Steak , Pumpkin Potage, mild game, stuffed Cabbage or Cabbage Rolls, Vietnamese Cuisine, soft cheeses like Saint Nectaire.
To be served at : 16°C for younger wines and at 18°C for more mature wines (aged 5 years)

Coteaux Bourguignons AOC Red PATRICK CLERGET

Vineyard and vines
Coteaux Bourguignons is an Appellation d'origine  contrôlée (AOC) for white, red and rosé wine from  the region of Burgundy in France. In late 2011,  it replaced the earlier appellation Bourgogne Grand  Ordinaire. The name Coteaux Bourguignons  translates as "Burgundian hills". Coteaux Bourguignons is a regional-level  appellation, covering the entire Burgundy region  from the area around Auxerre down to Beaujolais.

Grape variety
Gamay / Pinot Noir

Wine making
The    harvest   is    usually    manual    and sometimes mechanical. The    vinification     is     traditional    with temperature  controls.  With a  maceration of 8 to 10 days. The wine has been maturing during 6 month in tank.

Tasting notes
Visual aspect: crimson hue with purplish tinges,  brilliant. Nose: very typical, beautiful Gamay,  floral, fruity, delicious. Palate: wonderful,  ample, smooth, balanced, long-lasting, harmonious,  racy. Fruits, blossom

Food pairing
This light, fruity, and fluid burgundy goes  well with andouillette gratin; rare duck breast with cranberries and ceps, river fish with wine  sauce, grilled piece of beef and vegetable tart, wild boar stew with chestnuts, Burgundy marbled ham, and barbecued meat. To be serve at 16°C.

Chablis AOC White PATRICK CLERGET

Vineyard and vines
Located near Auxerre in the Yonne department in the northern part of Burgundy, the Chablis wine region runs alongside a little river with the soothing name of the Serein. The Cistercian monks of Pontigny Abbey did much to develop the vineyards from the 12th century onwards. No other French wine region has affirmed such faith in geology. The main bedrock comes from the Jurassic epoch, or more precisely the Kimmeridgean age (150 million years ago). Deposits of tiny oysters can be found in the rock, which were left by the warm, shallow sea that once covered this territory. These creatures were in the shape of a comma, which gives rise to their name: Exogyra virgula.

Wine Making
The grapes are pressed in pneumatic press. Cold settling during 48 hours before alcoholic fermentation. After alcoholic fermentation, the wine is aged on lees. Filtered before bottling.
 

Tasting notes
Visual aspect: bright, pale yellow color with yellow-green hues.
Nose: Mineral, with yellow-fleshed fruit and floral hints.
Palate: Crispy, fresh, mineral and pure, with hints of yellow fruits and lime aromas.

Food pairing
Fish, shellfish, oyster, lobster, Sushi, roasted white meat, poultry, Thai food, goat cheese.
To be served at 10-12°C.

This Bourgogne Chardonnay comes from areas which faces South and East, and thus offers an ideally sunshine.

Grape Variety
100% Chardonnay

Wine making
Harvest mannuel and machinery. Fermented in temperature controled stainless tank.

Tasting notes
Pleasant vintage, the wine possesses the characteristic of its region. The Chardonnay gives off characteristic flower scents: hawthorn, white flowers and rose; supple, well-balanced, fruity wine with very pleasant citrus fruits flavour. It has roundness in the mouth and a long aftertaste.

Food pairing
For the aperitif or with, green salad, cold starter, shell-fish, light first course and grilled fishes.
To be served at 12-14°C.

Macon-Villages AOC White PATRICK CLERGET

Vineyard and vines
The hills of the Mâconnais are linked along axes. The vines take readily to these hillsides. Limey or calcic brown rendzinas suit the long-keeping Chardonnays.

Wine Making
The vinification and alcoholic fermentation are made in stainless steel tanks.
 
Tasting notes
Visual aspect: white or yellow gold or straw-coloured with gently glowing silvery or greenish highlights.
Nose: aromas suggest broom, white roses, acacia, honeysuckle, fern, verbena, lemon-grass, and citrus fruits.
Palate: the finish adds nuances of pine, quince and fennel. The impression on the palate varies according to each village and each “terroir” of origin.This wine is fresh and luscious as well as dry and well-fruited.

Food pairing
Perfect as a pre-dinner drink served with salty finger foods. With poultry, meat, fish or cheese.
To be served at 12-14°C.

Chassagne-Montrachet AOC White PATRICK CLERGET

Vineyard and vines
In the southern part of the Côte de Beaune Chassagne-Montrachet shares with Puligny the incontested title of the prince of the world’s dry white wines.At altitudes between 220 and 325 metres, the succession of rocks from the top down is first rauracien then callovien and finally argovien.
The soil of the various “Climats” ranges from pebbly limestones, through marls, to sandy soils with a Jurassic bassis.

Tasting notes
Visual aspect: straw yellow very radiant color.
Nose: very expressive with aromas of white blossom, unveiling good concentration with notes of honey, brioche, pastry.
Palate: pure and supple attack evolving to white-fleshed fruit aromas. Fat palate enhanced by a very nice acidity. Long finish with full minerality.

Food pairing
To drink with smoked salmon with fennel purée, scallops, turbot cooked in butter, cheese from Cîteaux, a chaudfroid of poultry, salmon Bellevue.

Gevrey-Chambertin AOC Red PATRICK CLERGET

Vineyard and vines
Gevrey Chambertin is a village appellation of the north of the Côte de Nuits. The thin soils are of brown limestone. The grapes of this wine are produced 75% of 1er Cru “Clos du Chapitre” climate and 25% of 1er Cru “Craipillot” climate.
 
Grape Variety
100% Pinot Noir

Wine making
The harvest is manual with meticulous sorting of grapes in order to obtain the best quality. The traditional vinification is made in small stainless steel tanks with temperature controls.
After the alcoholic fermentation, the wine has been maturing during 14 month in oak barrels with 25% new oak.

Tasting notes
The color is ruby red, brilliant and limpid.
Very intense aromas with a touch of boxwood and full bodied with mashed red fruits aromas.
The mouth is round and the tannins are soft and smooth.
This wine has a very long aftertaste with vanilla notes.

Food pairing
This wine will very well accompany hair and game birds, T-bone steaks, braised lamb and cow cheese with character.

To be served between 16 and 18°C.

Wine Making
This quality of sparkling wine is produced according to the Charmat method. This method consists of fermentation for a second time in a tank. During ‘‘Cuvée’’(the blending of several grape varieties), sugar and yeast are added. The fermentation in a pressure tank that follows ‘‘Cuvée’’ lasts four weeks, during which bubbles take birth. A sparkling natural white follows. All our tradition, all our experience of fine frothy wines, is in this ‘‘Cuvée’’.

Original CHARMAT method

Alcohol : 11,5 %

Tasting notes
Nose: Fresh, expressed aromas, delicate blend of flowerish and fruity scents
Color: Light yellow, pale gold
Bubbles: Small, long-life bubbles
Taste: Rich, long lasting, and fruity taste
This Brut is light yet vigorous..

Food pairing
This sparkling wine is a great alternative to champagne. Produced using the Charmat method of sparkling wine production, popular in the Loire, Alsace and Burgundy. A lighter style of sparkling wine suitable for drinking as an aperitif, or with seafood, especially oysters!

Tasting notes
A wine bursting with youth and audacity. Its freshness and vigour are a matter of general agreement. Given time, it acquires the stateliness of a great wine. The brut faithfully reflects its lively and clear-cut personality.
It is white-gold colour. The bubbles are fine and form a delicate necklace around the edge of the glass. Floral, citrusy and mineral aromas are matched in the mouth by freshness and elegance plus a degree of acidity which is the key to a proper balance between aromatic power and the desired degree of lightness.

Food pairing
Above all a wine perfect for aperitif, this cuvee can accompany a wide variety of dishes: both raw and cooked shellfish (oysters), smoked fish (halibut, shark), and fish tartar salmon).

To be served at around 5 to 7°C

Crémant de Bourgogne AOC Rosé Brut

Grape Variety
Harmonious Blend of Pinot Noir and Gamay
The grapes come from a wide variety of soils in vineyard districts throughout Burgundy.
In order to respect the grape, harvesting is done by hand.

Wine making
Thanks to pneumatic presses, we carry out slow pressing; this exerts less pressure and therefore produces better quality results.
We are looking for expressive Crémants de Bourgogne which is why the level of residual sugar in our wine is 13g/L.
In the same vein, we produce our blends using 20 to 25% reserve wines to give the wine more complex aromas.

Vinification and maturing
Traditional Method

Length of storage in our cellar : 24 months

Alcohol : 12 %

Tasting notes
The careful selection of the blend used to produce this rosé give it its harmony and elegance.
It develops notes of fruity aromas with grenadine and other red fruit as well as very fine floral aromas.

Food pairing
This Crémant de Bourgogne Rosé is ideal for aperitifs or served with desserts made from red fruits.

We recommend that you serve it chilled, at 7-8°C.
