The new la­bels, illus­tra­ted with clo­seup pic­tures of his hands that plant the stock, prune, re­move the vine shoots, plough at the foot, also prove it. In the va­thouse, they blend, open and close the taps, check the tem­pe­ra­ture, dis­gorge…In the cel­lar they dig, re-open an­cient chalk gal­le­ries at eight me­ters deep, res­tore them to host thou­sands of bot­tles in stacks.
