First harvest August 14, thinning of July 10. Second harvest August 18, thinning of July 25. Blend in the tanks at the end of October. Fermentation in cement tanks, aging in cement tanks. Malolactic fermentation. On the lees from the beginning of November, until half of February. Alc/vol 12.90, acidity 5.10 and ph 3.23. Color of sun dried Golden onion skin. Scent of onion in a carnation field. Taste of wasabi seasoned salmon. Feelings of friendship. Became Don Pietro. To drink for the next 3 years.

Siriki Bianco

Fermentation with skins in stainless steel . vats until September 20 Fermentation tempe- rature 10°C. Manual pumpover with skins lowering. Blending in steel tanks. Malolactic fermentation in steel tanks. On the lees for 12 months, at 8°C. Alc/vol 13%, aci- dity 5.50 and pH 3.26. Strong color, tending to copper. Scents of orange and pistachio. Taste of smoked fish, hints of apricot. Sapid. Label telling a story. To drink always.

Alc/vol 13.17%, acidity 4.95 and ph 3.48. Bright color, typical of a young red wine. Aromas of pomegra- nate and red roses. Taste of red pepper and tomato extract. Neat feelings. Refre- shing, but rich at the same time. The color of the label matches the wine. Re- commended service tem- perature 11°C. To drink for the next 4 or 5 years.

Schietto Nero d'Avola

First harvest August 29, thinning of July 15. Vintage as it should be. Pied de cuve.
Second harvest August 31. Fermentation in ce- ment tanks. Malolactic fermentation. Ageing in steel and big barrel. Alc/vol 14.07%, acidity 6.39 and ph 3.40. Red color, as a Nero d’Avola should be. Scents of juniper and red carnation. Taste of dark chocolate and curry. Feelings of bluebarries, calls for another glass. Elegant wine, reminds a Pinot Noir. The vineyard well showed on the label. Suggested serving tem- perature 16 – 18 °C. To drink for the next 15 years, to appreciate it freshness.

About us

Company details

Spadafora is a noble Sicilian family whose first historical records date back to 1230. During the centuries, the House dominated over five principalities, a dukedom, two marquisates, a shire and twenty-five baronies. Some of the members of the Family had prestigious offices during the ‘Regno di Sicilia’ and in some European Countries.

The founder of Azienda Agricola Spadafora is Don Pietro Spadafora, who inherited the estate from the uncle Michele De Stefani, talented farmer and racehorse breeder.

The estate was damaged by the 1968 earthquake, but Don Pietro manages to rebuild and redevelop the company, retraining the autochthonous vines and bringing to Sicily international grapes, for high quality wines.

The current owner is Francesco Spadafora, son of Don Pietro, married with his wife Claudia and accompanied by his daughter Enrica.
