Spumante Metodo Classico

100% Nebbiolo
Area of production: Monforte d'Alba
Terroir: marly, calcareous sandstone
Harvest: hand-picked
Vinification: the grapes are then vinified in white. Is used only 40% of the must, that is the best part, called "flower must". The fermentation takes place with indigenous yeasts , part in steel tanks and part in wood. The wine undergoes bâtonnage at last to give it roundness and structure. Before Christmas, the base is added to the sparkling grape must Nebbiolo left to rest in the cellar for 30-40 days at controlled temperature and humidity that will serve to take the second fermentation in the bottle. It then runs the draft by adding yeast to the mass and it is bottled for the Fermentation
Maturation: the Spumante mature in our cellar for 30-36 months on its lees. During this time the remuage is performed manually 3-4 months. Degorgement is made with the best technical and filled with the same wine
Colour: slightly coppery / golden, onion-skin
Aroma characteristics: ripe fruit, apricot, raspberry and strawberry
Flavour Characteristics: the fresh acidity is supported by the tannic structure conferred by the Nebbiolo grapes that ensures a pleasant drink and a good time evolution
