Genius Loci Tenuta di Burchino - Sangiovese Toscana IGT

This Sangiovese “in purezza” (pure) is produced with selected grapes grown on a single vineyard belonging to the Burchino Estate, called Le Corti. Le Corti Cru is characterized by its particular exposition and the rich soil. The vines are cultivated with the cordon spur training system in order to obtain from 1 to 2 kg of grapes per vine. The grapes are selected and harvested by hand. After the primary fermentation in stainless steel the malolactic fermentation takes place in oak barrels where the wine is refined for 24 months.

TASTING NOTES
Colour:  Bright ruby red wine.
Bouquet:  It has an elegant impact on the nose with hints of lemon on a raspberry background.
Taste:  Warm and passionate with slight tannins, it lingers on the palate and is ready to drink now but will age well on its graceful balance.

Choops, rack of lamb, pork steaks, farmyard chicken, pasta al pesto.

Campomaggio Chianti Classico DOCG Riserva

The Campomaggio Estate is located in the wonderful region of Chianti, straddling the fascinating provinces of Florence and Siena. Years of ageing ennoble this Chianti Classico  which is only produced in the best years and specially selected as Reserve. Aged for 24 months in oak casks. It completes its refinement in bottles for a minimum period of 3 months.

TASTING NOTES
Colour:  Ruby red colour tending to garnet with ageing.
Bouquet:  Cedar, sandalwood and a sweet dustiness on the nose.
Flavour:  Cherry and toasted oak palate. The finish has fine-grained tannins and a lovely back-end bouquet.

Ceppaiano Violetta Toscana IGT

Hand-picked grapes are immediately fermented in the modern cellars of Ceppaiano following the traditional vinification methods. The ageing takes place for 12 months in French oak barrels.

TASTING NOTES
Colour:  Dark and intense ruby red colour.
Bouquet:  Complex, with multiple layers of primary fruity aromas of wild roses, cherries, mint, cassis and licorice. Secondary aromas of resin, oak, leather and toasted sweet coffee.
Taste:  Intriguing taste mixing sweet flavour of white chocolate, vanilla and cedar on a buttery bed of oak verticalized by a gentle acidity. Long finish. Wonderful Sangiovese-Cabernet blend, Brunello style.

FOOD PAIRINGS
It is and ideal wine to accompany pasta dishes and spicy Mediterranean dishes

Poggio al Casone Grand Noir Toscana IGT - Organic

Grand Noir grapes are selected and harvested by hand. The fermentation takes place in stainless steel tanks in contact with the skins for 8-10 days. During the year three rackings are made and then the wine is bottled without any filtration and refined in bottle for a minimum of 12 months.

TASTING NOTES
Colour:  Intense ruby red color with purple reflections.
Bouquet:  Very fruity on the nose with hints of strawberry and wild dark fruits.
Flavour:  Spicy and complex with elegant nuances of black pepper and Mediterranean balsamic herbs, light refreshing body with velvety texture.

FOOD PAIRINGS
Thanks to its spicy and light flavor it matches perfectly with Asiatic cuisine and light meals; it is also a perfect red wine for appetizers.
Service Temperature: 18/20°C.

CURIOSITY
The Grand Noir is a hybrid derived from a cross between Aramond and Petit Bouchet. It was created in 1885 by Henry Bouchet, who baptized it with the name "Grand Noir de la Calmette" in honor of the place where there was his property in the Hérault department. It is a vine with colored berry spread in France in the XX century. While until the sixties it was the fifth grape for extension of hectares, (about 31.000) currently it has almost disappeared from its country of origin. It was introduced in Italy (in Tuscany) by Professor Racah at the beginning of the XX century in order to replace Colorino and Tinturier. It was particularly common in the area of the Pisan Hills. Today this type of vine, almost disappeared, thanks to a research of Castellani lasted more than 15 years in collaboration with the University of Pisa, began to grow in Poggio al Casone hills.

Tenuta Santa Lucia Ciliegiolo Toscana IGT - Organic

This wine is produced from Ciliegiolo (cee-lee-a-jo-low aka “cherry-grape”) grapes grown in the low-yielding organic vineyard of the Tenuta Santa Lucia on coastal Tuscany near Pisa.
Following the old traditional vinification method, completely mature grapes are harvested from vineyards and crushed almost immediately. Afterwards the grapes are poured in large inox tanks for fermentation. The primary fermentation evolves at a controlled temperature for approx. 15 days. When the primary fermentation is perfect, the wine is filtered and stored at constant temperature in oak barrels for a minimum period of 6 months, in order to obtain warmer tones and colours..

TASTING NOTES
Colour:  Deep ruby red in colour.
Bouquet:  Rich spicy perfumes and black pepper notes with a hint of raisins.
Taste:  Full body balanced taste, very intense and spicy with sweet cherry flavours.

FOOD PAIRINGS
White and red meat, game, fresh and aged cheeses.
Service Temperature: 18°C.

CURIOSITY
Ciliegiolo is a variety of red wine grape from Italy, named after the Italian for 'cherry'. It is a minor component of traditional blends such as Chianti, but interest has revived in recent years.

Fattoria di Travalda Toscana IGT - Organic

In the ancient Travalda estate, name dating back to Roman times, is located the headquarter of the Castellani winery and the vineyard that bears the name of the “Bordelaise blend”. The vineyard is cultivated with organic practices. The grapes are hand-picked and selected in crates. They are then vinified blending all the different varietals in stainless steel tanks at controlled temperature. Maceration with skins for 20 days and delestage every three days. The malolactic fermentation takes place in barrique by 225Lt. After minimum 18 months in barrique the wine is bottled with no filtration and continues its refining in bottle for at least 6 months.

TASTING NOTES
Colour:  Intense ruby red colour.
Bouquet:  Extraordinary floral components with intense notes of geranium and jasmine, red berries, toasted coffee, chocolate and spices.
Flavour:  Medium bodied with silky tannins.

FOOD PAIRINGS
Ideal with all Mediterranean dishes, roast, game meat and spicy cheese.
Service Temperature: 18-20°C.

ART
The label is inspired by the work of the artist Caterina Sbrana “On landscape with vine black”, an ancient pigment that she obtained from the vine shoots collected in the vineyards around the Art Foundation "Materia Prima".

Famiglia Castellani Collesano Collection Brunello di Montalcino DOCG

The "Collesano Collection" celebrates the Tuscan winemaking tradition and the passion of the Castellani family for Art and Nature.
Andrea Collesano’s evocative graphics are associated with the most famous Tuscan wines selected and aged in Castellani cellars, wines of great value created to pair with the finest cuisine.

VINIFICATION AND REFINEMENT
Montalcino area has one of the warmest and driest climates in Tuscany with the Sangiovese grapes in the area ripening up to a week earlier than in nearby Vino Nobile di Montepulciano and Chianti Classico. Along with Chianti, Brunello di Montalcino is Tuscany's most famous DOCG and its boldest expression of the Sangiovese grape. The word Brunello translates roughly as 'little dark one', and is the local vernacular name for Sangiovese Grosso, the large-berried form of Sangiovese which grows in the area.
According to the disciplinare di produzione (the legal document laying out the wine's production laws) Brunello is required to age for a minimum of 2 years in oak casks while bottle ageing must be at least 4 months. The wine must be bottled in only Bordeaux bottles within the township of Montalcino and can be released for sale only five years after the harvest.

WINE DESCRIPTION
Colour: Intense ruby red tending towards garnet as it ages.
Bouquet: Intense and characteristic, ethereal and complex, fruity and oaky, with balsamic overtones.
Taste: Full-bodied, luscious and well structured with long finish.

FOOD PAIRINGS
It is an excellent wine for beef, pork but also for cheese like Tuscan ewe-cheese, Parmesan cheese and spicy Gorgonzola. It is also extremely good with dishes of meat of the international cuisine, with sauces made from mushrooms and truffles, excellent with furred game and game birds too. Brunello is also suitable for "meditation wine" above all if of the best vintages, well conserved and at the top of their qualitative evolution.
Serve at 18/20°C.

VINIFICATION AND REFINEMENT
Our Vino Nobile di Montepulciano is produced and refined in the heart of the production area, from vineyards situated in a countryside rich in traditions and history. The origin of Vino Nobile goes back to the 17th century, when it was defined «The King of Tuscan Wines». Doubtlessly drunk and appreciated by aristocrats (hence its name) this wine has transcended its fame to modern times. In the last 20 years Castellani family took part to the renewal of the excellence of this wine.
We follow the traditional vinification methods: completely mature grapes are harvested from vineyards and immediately destemmed and softly pressed. The fermentation takes place at controlled temperature with a prolonged maceration with the skins. The minimum ageing period is 24 months in traditional casks of Slavonian oak. Thanks to its firm character our Vino Nobile has a great ageing potential.

WINE DESCRIPTION
Colour: Intense ruby red colour with garnet reflections tending to orange with ageing.
Bouquet: Intense notes of ripe plum followed by delicate scents of cherry and strawberry. Spicy sensations and hints of leather and tobacco.
Taste: The mouth-feeling offers round but steady tannins with an elegant and well-balanced complexity .The flavors persist through a lingering and smooth finish.

VINIFICATION AND REFINEMENT
Made with grapes selected from Castellani’s coastal vineyards characterized by the typical sandy, clayey and calcareous soil. To produce this premium Tuscan wine we follow the old traditional vinification method: completely mature grapes are harvested from vineyards and immediately processed in our cellar where the fermentation process takes place at controlled temperature. A prolonged maceration with the skins follows for at least 10/15 days. After malolactic fermentation a portion of the wine is refined in wood for six months, the remaining part remains in steel tanks for at least one year. The two different cuvée are blended before the bottling.

WINE DESCRIPTION
Colour: Intense ruby red colour.
Bouquet: Rich plum and bramble fruit flavours and a slight hint of cherries followed by a characteristic scent of violets, strawberries and pepper.
Taste: Red fruits mingles with sweet woody notes. Warm, the nice texture is characterized by vigorous but delicate tannins. The slight aging in wood gives the wine a pleasant feel of toasted coffee and vanilla.

VINIFICATION
Vermentino is one of the few white grapes that perfectly acclimated to the Mediterranean Tuscany. It loves sea breezes and sunlight and in return provides opulent flavour and radiant freshness.
This wine is produced with Vermentino grapes grown in the low-yielding vineyard of the coastal Tuscany. At the arrival to the cellar, the grapes are de-stemmed and softly crushed. By pressing we obtain different fractions of juice, each of which is cooled to 8°C for 24 hours in order to favor the natural decantation. The clear must is then poured into stainless steel tanks where the alcoholic fermentation takes place at a temperature not exceeding 12°C. About a month after the fermentation, an accurate assessment of the different lots of wine obtained is made to assemble the selected ones to make the final blend.

WINE DESCRIPTION
Colour: Straw yellow with light golden hues.
Bouquet: Complex with floral notes, white flowers, with stone and Mediterranean spices, sage, rosemary and mint.
Taste: Persistent, full and well balanced by the mineral notes and the bright acidity.

KEITH HARING & THE CASTELLANI FAMILY
In 1989 the Castellani Family invited Keith Haring to Pisa to realize what would become one of his most important permanent public works, the monumental mural "Tuttomondo".
On that occasion, the artist gave the family a wine label he had designed for the house wine of a friend’s restaurant, hoping that one day it could be used for a prestigious wine produced in Tuscany.
Today, more than 30 years later, this project finds its realization thanks to a special commemorative cuvee produced by the Castellani family in one of its best vineyards, in the Tenuta di Ceppaiano on the Tuscan coast.
A special thanks goes to the Keith Haring Foundation which granted the use of the label design.

TENUTA DI CEPPAIANO
The Ceppaiano Estate is the latest addition to the constellation of historic vineyards of the Castellani family. The beautiful calcareous soil, the mild climate, the extreme brightness conferred by the proximity of the sea and the use of integrated techniques of organic
farming, allow the preservation of the purity of the fruit during cultivation, harvesting and vinification.
The Ceppaiano Villa is also home to the Materia Prima foundation, a project by the Castellani family to promote contemporary art and support young artists.

Materia Prima is an “Art sanctuary” created by Piergiorgio Castellani in one of the most celebrated of his family wine estates in Tuscany.
The Ceppaiano Villa host an art residency non-profit project which future up and coming artists from around the world to come and cultivate their craft in the vineyard estate.

The grapes are hand-picked and in order to preserve the quality of the aromas they are cooled with dry ice. The must is fermented for long periods in tanks at very low temperature, about 6°C, to keep intact the aromatic intensity.

Ceppaiano Toscana IGT Rosato

The Ceppaiano vineyard is located on the edges of Arno River, on sandy soils rich in minerals and fossils of marine origin, in one of the most vocated areas of Pisan hills at about 25km from Tyrrhenian Sea.
After de-stemming the whole grapes are transferred into the press and left to macerate only for a few minutes, separating the various color fractions. During the contact time the must is enriched by acquiring the pigments of the skins and aromas. Grape must then undergo a temperature reduction to clean it from the coarsest part of the lees and, once cleaned, it is fermented at controlled temperature (12-16°C). Once the alcoholic fermentation is complete, the wine is clarified and stabilized before bottling.

Colour:  Pale pink with purple notes.
Bouquet:  On the nose evident bouquet of fresh fruit, peach, apricot and white flowers.
Flavour:  On the palate it is fresh, savoury and mineral.

Ceppaiano Chianti DOCG

The grapes for this wine grow in hillside vineyards planted on sandy, clayey and calcareous soil in Chianti DOCG growing area. After a careful selection completely mature grapes are de-stemmed and pressed. The entire process of vinification and maceration takes place in stainless steel tanks: after approximately 12 days of fermentation at controlled temperature of 20-25°C, the grape skins are left to macerate in wine for a further period, then the wine is finally removed from the skins and undergoes malolactic fermentation, a process that lowers total acidity and makes wine seem rounder and fuller in flavor. The wine is then cold-stabilized, assembled and finally bottled during the following spring.

Colour:  Vivacious ruby red colour tending to garnet with ageing.
Bouquet:  Intense and characteristic bouquet, fruity with a violet fragrance and a slight hint of cherries.

Burchino Toscana IGT Governo all'Uso Toscano

From selected Sangiovese, Ciliegiolo and Cabernet S. grapes, we produce this premium Tuscan wine. We follow the old traditional vinification method: completely mature grapes are harvested from vineyards and processed in membrane presses. Soft presses, fermentation at controlled temperatures and prolonged maceration with the skins.
The 10% of this blend is made from Cabernet S. grapes that are harvested when they are dried on the vine, then pressed and subsequently added to the fermented wine in order to make it softer, richer in colour and more structured.

TASTING NOTES
Colour:  Intense ruby red.
Bouquet:  Aromas of cherry and raspberry.
Flavour:  Mature and intense red fruits, robust and balanced on the palate. Silky and soft tannins.

CURIOSITY
The Italian word “governo” is usually referred to the government but it is also the name of an old vinification method mainly used in Tuscany.
Governo alla Toscana vinification method was developed in Chianti area in XIX century when wine daily accompanied the meals. It was necessary to quickly refine the wine and obtain a full and rounded mouth-feel wine. Today it refers to a specific way to process/treat the grapes: this technique consists in a secondary slow re-fermentation of the wine lasting 2-3 weeks by adding the must of overripe grapes. This slow re-fermentation leads to release noble polyphenols and increase in the alcoholic strength, extracts, glycerin and smoothness.
