We present the new Umami wine made by Bertha cavas. The 80% of this wine has been elaborated with vineyards Macabeu and Xarel·lo of 65 years of antiquity. The soil is clay and calcareous and gives the wine an exceptional minerality.

The vineyard has been treated with much pampering, making a clever pruning to go looking for the highest quality. We have respected the herb layer when it was necessary, it has been ecologically worked and the plant has been given the utmost importance for its development to be sustainable.

The collection has been manual, has been collected with boxes of 25 kilos. The grapes have been frozen before pressing to delay the fermentation and improve the extraction of the pulp glued to the skin of the grain.

The fermentation has been very slow with different selected yeasts and low temperatures. There has been a maceration of the mothers with wine for 4 months with stainless steel tank.

Mountain is the first white wine made by Bertha cellars. The vineyard is located next to the cellars, consisting of 2.5 hectares of Xarel·lo 65 years old. The earth is clayey and limestone, so it gives the wine exceptional salinity and mineralization.

The vineyard has been worked with great care, making a smart pruning to achieve the highest quality, we have respected the herbaceous layer when necessary, we have followed the guidelines necessary to work ecologically, we have given the plant its utmost importance for its development Is sustainable. The plants are very old and should be treated very carefully. The collection has been manual.

The wine is 100% Xarel·lo, it has been made a previous selection of the grape in the vineyard, it has been taken in boxes of 25 kilos. The grape has been frozen before pressing, to delay the fermentation and to improve the extraction of the pulp attached to the skin.
The fermentation has been very slow with different selected yeasts and low temperatures. There has been a maceration of mothers with wine for 7 months in stainless steel tank, and a breeding in bottle for 6 months. It really is a long wine.

From 1989 we have been producing what is for us the best wine in the world: THE CAVA. You won’t find anywhere else a sparkling wine with a so marked personality, due to the landscape, the land, the climate and, above all, because of its local grape varietals. The blend of these grape varietals provides the cava a unique personality.
The Montserrat mountain range gives shelter to the Penedès region, which is located rather close to the sea. Its a special place where base wines are produced because of its extraordinay situation. The landscape is an spectacle in any period of the year.

Our little work of art, the cava Bertha, is born in this setting.
