Production and maturation
The grapes are sourced from selected vineyards in Northwestern Macedonia, on altitude of 600m, on sandy soil with low yield. This blend of Merlot grapes and the most important Greek red varietal Xinomavro gives the wine its expressive character and the result is a feel good wine on every level.

 Aroma: Large and complex aroma with a spicy note and well-integrated oak character , hints of cherry, plum and herbs.
Taste: Full-bodied, balanced taste, and with a silky tannin structure softened by creamy spicy oak, hints of dark cherries and herbs.
Compatible with: Meat dishes of lamb, beef and game, and fine cheeses.
Winemaker’s note:  It has been aged a total of four years, of which three of them in large barrels, called Botti, made of Slovenian oak and then a year of bottle storage.

A full-bodied, dark red wine reminiscent of ripe berries, blueberries, and cassis. Complexed by licorice and a hint of oak. It is a perfect match with white or red meat, such as grilled pork or beef.
Winemaker’s note
The grapes are picked by hand and vinified with modern methods. Fermentation at 25 C in stainless steel tanks with daily remontage. Maceration for 10-12 days, malolactic fermentation and partial oak maturation. Primitivo is traditionally grown in Puglia, the “heel of Italy”, where it was introduced in the 18th century. The grape found its way to the United States in the mid-19th century, and became known as Zinfandel. ALBERELLO are specially caltivated “bush” vines of Primitivo.

We have selected vineyards in the north side of Salento. Here the land is hilly. Soils are thin and gravelly with low water retention so the production is naturally low. This allows us obtain  a medium body wine with ever so soft tannins, succulent acidity and moderately intense cherry and herb flavors.  After malolactic the wine matures for 6 months in a combination of tank and oak.

•BIGGEST BOY: Power – The result, by combining the rich soils in southern Italy’s region of Puglia and oak fermentation of matured grapes. Plus the maturation for 6 months in French Oak. It has a generous aroma of dark berries and notes of oak, peppermint and vanilla.

Zinfandel or Primitivo is traditionally grown in Puglia, the “heel of Italy”, where it was introduced in the 18th century. The grape found its way to the United States in the mid-19th century, and became known as Zinfandel.
Description: Fermented in American oak (Quercus Alba) which, unlike the French oak gives the wine a more vanilla character, with hints of coconut and caramel. The wine is also matured for 6 months in American Oak.

Chunky Red presents a generous aroma of dark berries and notes of oak, peppermint and vanilla. The rich flavor is packed with fruit such as cassis, but there are also hints of chocolate, mint, vanilla, coffee and licorice. May be stored for 3-4 years.

 CHOCOLATE TUBE Primitivo, is a natural wine, with no addition of chocolate, offering taste and aromas of bitter-black chocolate.
 -To create it, we use selected Primitivo-Alberello grapes, with high consetration in color and body, and with aromas of cocoa.
 -By the oak fermentation and the special maturation in toasted barriques the wine gets its final chocolate taste and aroma.

Winemakers note
This wine is made from organically grown Grecanico grapes from Sicily. Probably imported from  Greece, Grecanico has been a widespread variety in west Sicily since historical times. To enhance its pronounced  aromatic profile the "golden" bunches of Grecanico are harvested, during the later part of September, in the cool hours of the early  morning. Then vinified according  to the most modern methods. After a 12 hours of cold maceration, the grapes are gently pressed  and a long, slow cool ferment ensues at in stainless steel tanks.  Maceration for five months on lees adds complexity and volume to this gentle and elegant wine.

CASTELMARE Ripasso Valpolicella has a generous and fruity bouquet with notes of cherries, plums and oak. Goes well with dishes of pork, lamb, beef and juicy pasta dishes, antipasto and  is a deep ruby red wine with an aroma typical for the variety with  notes of dark chocolate and delicious hints of dark cherries, violets and spices. Full bodied with a well-structured flavor of dark fruits, a fresh acidity and soft but distinct tannins and a slight sweetness in the balanced dry taste. An elegant Ripasso with a musty palate that goes well with dark meat and game, parmesan and matured cheese.
Winemakers note
The fully destemmed grapes are pressed and allowed to ferment at 25-28°, followed by 12 days of maceration with automatic pressing of the pomace for 20 minutes three times a day. The wine will rest in stainless steel tanks until February, when a second fermentation is initiated by the addition of pomace and lees from an Amarone wine, according to the Ripasso method. Maceration lasts 15 days at a temperature of 15°C and with daily pressing of the pomace, followed by full malolactic fermentation. At the end of May the wine is stored in barrels for 12 months, followed by 6 months in the bottle. Stabilization is done through natural clarification and also the wine has not been filtered. May be stored for 10 years. The wine should be aired or decanted before serving.

After the first fermentation of the dried grapes, the two components are mixed and fermented a second time to together. The wine is after this fermentation aged for about 8 months in French oak barrels of varying sizes, 225 litres as well as 500 litres. Potential aging 6-7 years.
The soil in the region is rocky and major made of alluvial soil based on chalk or volcanic origins.

Harvested in the early morning from selected mountain side slopes in the Stellenbosch and Franschoek areas – both renowned for specializing in these varieties. The grapes are stored in a refrigerated cool store for a further 24 hours to maintain freshness, then gently pressed – only free run juice and very light pressings used. A combination of tank and barrel fermentation was used to combine both richness and freshness.
Winemakers note
Delightful aromas of Cape gooseberry marmalade and flint enhanced by flavors of melon and cashew nut with a long mineral finish. This wine can be enjoyed with seafood, paella or antipasti. Best served at 10-12 C.

Harvested in the early morning from a selection of hillside and south facing vineyards. Fermented in stainless steel tanks for 7- 10 days and then a portion taken to barrel for malolactic fermentation, with the balance being completed in tank. Matured in small French barrels for more than a year before being blended and gently fined.

The flavor is spicy and rich with concentrated fruit flavors of blackberry, ripe plums and fresh red raspberries. The subtle use of oak maturation evens out the tannin structure and creates a gentle finish. The wine goes will with flavorsome dishes of red meat, lamb, pasta dishes and tapas.
Winemakers note
This wine is made from the grape Zinfandel (known as Primitivo in Italy) from the Lodi region in the Central Valley, California. The use of oak barrels during the fermentation gives the wine strength and a complex character.  After vinification the wine is matured in American oak for 6 months. Potential aging 5 years.
Lodi vineyards were developed in the fine sandy loam soils surrounding the community. It’s here along the banks of the Mokelumne River where the majority of Lodi’s century-old own-rooted Zinfandel vineyards lie.

The grapes were harvested during the cool of night and cold fermented in stainless steel tanks to protect the fresh, delicate fruit characteristics. The fruit is then handled gently in the winery, with minimal winemaking interference. The slightest touch of oak adds further complexity without compromising the wine’s distinctly fruit driven style.
