CUATRO RAYAS VERDEJO VENDIMIA NOCTURNA

Selected vineyards. Night mechanical harvest. Produced with selected Verdejo variety grapes coming from a delicate combination of different estates and vineyard terrains located in D.O. Rueda. Fermentation in stainless steel vat, cold maceration at 6º C for 4 hours. Lemon yellow colour, bright. It shows a powerful nose, with hints of fresh fruit, green apple and hay. Refreshing, balanced, sweet on the palate, round and very fruity, it has character and a delicate fennel finish. Pairing: Fish and fresh seafood, pasta, rice, cheese and white meat. Serving Temperature: 6 -8 ºC.

More than 20-years-old vineyard. Night mechanical harvest. Fermentation in stainless steel vat, cold maceration at 6º C for 4 hours. Straw yellow colour with steely rim. Full bodied and appealing on the nose with citric undertones. Fatty and balanced on the palate with passion fruit and pineapple hints. Pairing: Fish, fresh seafood and risottos. CUATRO RAYAS FERMENTADO EN BARRICA

More than 30-years-old vineyard. Daytime manual harvest. French Allier and American oak barrel fermented. Aged on lees in barrels for 6 months. The wine has a deep lemon yellow colour. Clean and intense on the nose, roasted and ripe fruit aromas with hints of boxwood. Structured, balanced and unctuous on the palate. It is a creamy wine, very intense and nuances reminiscent of vanilla and balsamic. Pairing: Fish and grilled meat. Serving Temperature: 8 - 10ºC.

CUATRO RAYAS VIÑEDOS CENTENARIOS

80 to 100 years old gobelet-trained vineyards. Daytime manual harvest. Fermentation at 15º C with selected yeasts. Fifteen percent of the production is fermented in 500L French oak barrels and the rest in stainless steel vats. Aged on lees in a stainless steel vat for five months with bâtonnage. Pale yellow with greenish highlights, clean, bright and transparent. Great intensity on the nose. Very clean and floral aromas, hints of white flowers, acacia over a background of ripe fruit, candied fruit and the typical fennel aromas of the variety. Very round and unctuous on the palate, very fatty, and a lingering mouthfeel. Aromas reminiscent of flowers on the aftertaste. Long finish. Pairing: Fish and grilled meat. Serving Temperature: 8 - 10ºC.

From winery’s organic vine estates. Night mechanical harvest. Fermentation in stainless steel vat. Bâtonnage for at least 3

From winery’s organic vine estates. Stainless steel vat fermentation with temperature control, with daily rack and return. Fermentation at 22ºC for approximately 10 or 12 days. Three months in oak barrels. Bright and clean, mid-depth ruby red colour and purple hue. Intense aroma with hints of ripe berries. Soft and velvety on the palate, perfect balance between tannins and acidity, round and long finish. Pairing: Stews, roasts and cheese. Serving Temperature: 14-16ºC.

From more than 40 years-old gobelet-trained vines. Ángel Calleja’s Special Selection. Aged on fine lees for five months with bâtonnage in vats. Yellow-lemon colour with greenish hues. Intense and clean on the nose, with a strong aroma of the traditional Verdejo wines, fennel, undergrowth. Very harmonious and balanced. Fat and long on the palate, with structure and a long finish. Elena M. Oyagüe’s Special Selection. Cold maceration. Fermentation in vats at 15ºC. Made with 100% Sauvignon Blanc grape variety from vineyards planted in the 90’s. Pale yellow colour, fruity and aromatic wine. The aromas evoke citrus fruits over a background of white flowers and a balsamic note reminiscent of mint. On the palate, it has a high and refreshing acidity, like citrus fruit. Pairing: This wine goes very well with fish dishes and raw, steamed or grilled shellfish. It also pairs perfectly with rice. Serving Temperature: 8 - 10ºC.

It is a wine that breaks the myth that Verdejo wine should be consumed within a year, against those who say that this grape evolves badly in the bottle. With this newly wine for ageing put on the market, the winery tries that the condition of the grape (ripeness, pH, etc.) selected from forty years old vines, as well as the ageing on lees and the short oak barrel ageing provide the wine the required complexity so that time can bring the best of it.

AMADOR DIEZ

Selection of the oldest —more than 100 year-old— pre-phylloxera vineyards of the winery. Manual harvest. Fermentation with selected yeasts, in 500L French and American oak barrels. Aged on lees for 8 months with bâtonnage in the barrels.
Lemon yellow colour with golden highlights, bright. Intense and complex on the nose, very elegant and perfect harmony between the fruity aromas of the variety and the aromas coming from the ageing in oak barrels. Aromas are reminiscent of nuts that go along with ripe and sweet stone fruit over a background of wood. Unctuous and full-bodied on the palate. On the retronasal, the identified aromas on the nose follow through, very long finish. Pairing: Appetizers, fish and specially shellfish. Also, red and roasted meat and flavourful products as cheese, foie and cured ham. Serving Temperature: 8 - 10ºC.

"61" DORADO

Dorado de Rueda is the most reliable witness of how winemaking was done in the past. It is a fortified white wine from Verdejo
and Palomino varieties. The secret remains in the overripe grapes and the oxidative ageing resulting from the solera process. Golden, clean and bright, with nutty hints and a slightly roasted flavour. Dorado “61” takes its name from the number of the concrete vat where Boega Cuatro Rayas' founding members used to age a selection of their own private wines. This blend was such a success in the ‘50s that it became the first brand of the today renowned Cuatro Rayas Winery.

"61" DORADO EN RAMA

Palomino of Cuatro Rayas, coming from just one-hectare plot dating back to a century, is half vinified with century-old Verdejo vines that refresh a selection of twelve plus one butts with velo de flor. Winemakers Elena M. Oyagüe and Roberto L. Tello have tasted more than a hundred barrels, some with wines older than 60 years-old, selecting the best ones to produce an exceptional coupage. The wine, aged in these butts in the same manner as the solera system of Sherry wine, when it loses the flor at the end of Spring, experiences an oxidation process that makes it golden. From the butt to the bottle without fining or filtering this ‘Dorado en rama’ is the everlasting expression of the authentic mid-twentieth century soleras in the present-day DO Rueda.
Limited production: 1,000 bottles.
