Following this phase, begins the fermentation of the must in controlled-temperature, of 16 - 18°C, pressurized stainless steel tanks until the alcohol level reaches 5,5%. This is the phase in which the fizz, typical of Moscato, is produced, obtained by trapping the CO, a natural by-product of fermentation, in the tank until the internal pressure has reached a maximum of 2 atmospheres.
Pressure: 2,45 ATM
Tasting notes: Light straw in color with a pleasantly frothy mousse of tiny bubbles. Incredible aromas of orange blossoms, white peaches and rose on the nose. Mouthwatering apricot and mineral flavors. Weightless, vibrant, refreshing.
