Vinification and Aging: in the vineyard dedicated to this wine the plant density reaches 9000 vines per hectare, the natural competition between the plants makes them produce no more than 500 grams of grapes per plant. The fermentation that occurs spontaneously through indigenous yeasts takes place in 500 liter oak barrels used as small vats, repeated manual punching is carried out during the fermentation process. At the racking, the wine is decanted directly into barriques where malo-lactic fermentation takes place, permanently lingering on its fine lees which are frequently removed by means of “batonage”. Matured in the same barrels for about 24 months, it completes its refinement first in cement vats and then for at least 12 months in bottle..

Vinification and Aging: Petresco is born in the vineyard and for over twenty years is our historical and careful selection of Sangiovese grapes from a single vineyard placed in a top position compared to the other vineyards; the vineyard is located between 470/480 msl. Vinified in a natural way by spontaneous fermentation in cement vats, after the racking continues its elevation in small French oak barrels where it performs malo-lactic fermentation and then continues its refinement for about 24 months. Then it lays again in cement vats before being bottled and then long refined in the bottle.

Company details

The name “Le Cinciole” indicates a locality that has been so called for centuries and apparently it is the vulgarization of “Le terre di Quintius” (lands of Quintius). 

We arrived here at the beginning of the Nineties, driven by love for nature and dreaming of producing quality products created with respect for tradition and the environment.
Over the years we have worked hard to grow the farm. We have re-planted new vineyards in order to improve the quality, restructured and expanded the cellar, renovated the machinery, diversified the production, renovated the old farmhouse following an eco-sustainable logic, realized a photovoltaic system that produces 100% of the energy we need.

Today Le Cinciole is a modern and dynamic farm, 100% sustainable.
