Hillside vineyards in the Gavi region. Admirable balance and easy drinking are Rolonas main personality traits. The bouquet is rich and long lingering, offering crisp, refreshing aromas of pear and green apple, dried hay, plus an intriguing hint of citrus and earthy mineral. This Gavi is most impressive on the palate, with a leisurely development and lively crispness that attest to its absolutely classic style. Serve in tulip-shaped glass at 10° C.
The grapes are transferred to the cellar immediately and undergo soft pressing to extract the very best from the fruit. Fermentation takes place slowly at a controlled temperature (18-20°C, to maintain the typically rich aromas of the Cortese di Gavi varietal) and lasts for up to 20 days. The wine is bottled in february or March to allow a minimal ageing, period in bottles before the wine is sold, and to make sure it reaches a certain level of maturity and balance.
The wine is very pleasant the spring after the harvest but is at its most enjoyable after a few months in the bottles. It can be kept in bottles for several years without suffering in quality.

ABOUT THE VINEYARD
The grapes are hand-picked from our estate vineyards, which we carefully manage with the objective of obtaining distinctive, quality-rich base wines for our sparkling wines.
The clusters are pressed gently and progressively, yielding several must fractions; the must is fermented in steel with cultured yeasts. In the spring, the wine is given the liqueur de tirage; it then re-ferments in the bottle and matures sur lie for 18 months before being disgorged.
The bouquet boasts floral and fruity impressions, enriched with nuances of petits fours, toasted almond, and fresh-baked bread. On the palate, it is crisp, self-confident, and ultra-appealing. These qualities make it ideal as an aperitif as well as a sparkling wine to enjoy throughout the meal.

OUR HISTORY Castellari Bergaglios history is that of a family who decided to dedicate their time to wine production in the late 19th century. The winerys objective has always been to make wines whose features are unmistakeably linked to the terroir, and to achieve this attention is focused on the Cortese grape variety, emblematic of the Gavi production zone.
