ROSATO DI TOSCANA It is obtained by 100% Sangiovese grapes, by setting some of the must apart in the very first hours of maceration, as soon as it has absorbed a pinky colouring. Our Rosato is a fresh, fruity wine with marked floral perfumes, and nevertheless concentrated and consistent.
GRAPES: Sangiovese toscano 100%.
TECHNIQUE: The must is set apart from the skins right after a few hours of maceration, held at a temperature of 10°C max. Then, the fermentation develops at controlled temperature of 18°C and is stopped with a residual sugar of around 6g/l.
ORGANOLEPTIC CHARACTERISTICS: Salmon-pink colour. Intense and rich nose, with typical fruit and flower flavour, with notes of wild strawberry. On the palate, it is medium-bodied, with lively acidity and good softness, exalted by a light residual sugar.
CHIANTI RUFINA RISERVA This wine is released after about 30 months of ageing; anyway, more years of cellaring will contribute to develop bothstructure and complexity. Extremely rich and structured wine, we suggest to match it with roasted meats, stewed meats and aged cheeses.

The malolactic fermentation is completed in inox tanks, then the wine stays for 18 months in French oak barrels, half new and half one or two-year old. The bottle ageing is of about six months.
ORGANOLEPTIC CHARACTERISTICS: Deep ruby red colour. Concentrated nose showing plum and berry character. On the palate full and round, with soft tannins and a long, fruity, peppery finish.
