Iperico Valpolicella DOC

From Corvina, Rondinella, Molinara,  the organic grapes were grown in the estate’s own vineyards. The average density of these vineyards is between 3000 and 5000 vines/ha and are both guyot as well as classic pergola trained. The vines are planted on poor soils with a high rock content. The vineyards are organic certified since 2014.
The grapes are hand harvested from mid-September until the second half of October.
The grapes were fermented with selected yeast in tronconic stainless steel tank at controlled temperature (below 20°C). Remontage was done twice daily and the wine remained on the skins for a total of 15 days. After alcoholic fermentation,  malolactic fermentation took place.
After Fermentation the wine was racked off the skins and aged for 7 months on the fine lees in stainless steel tanks. After bottling the wine is aged for six months in the estate’s cellar before being released onto the market
Purple medium red, with intense bouquet and nice full mouth. Fresh and Fruity, with a hint of violet. Succulent red fruit on the palate with a fresh note due to its pleasant acidity.
Iperico gives its best with food. We suggest it with salads, pasta dishes, vegetables, spicy or oriental food, complex, dishes of fish. It is very good also chilled as “aperitif”.

IL TABARRO 2015

Our Valpolicella Classico Superiore, intense, elegant and evolved. | biologico
 
Valpolicella Superiore is obtained from the selection of the best Valpolicella wine in the cellar. In this wine freshness, fruit and soft oak notes blend wonderfully giving it great versatility. It is aged in wood a year.

TECHNICAL INFORMATION
 
Grape varieties: Corvina 65%, Rondinella 25%, Molinara 10%.
Vineyard area: Rasso, Monte Tenda, Monte Crosetta, — on the top of limestone hills in the Fumane, and San Pietro in Cariano areas, where the soil is ideal for the production of great red wines.
Yield: 70 tonnes (from 3000 to 5000 vines per ha)
Training system: Guyot, double Pergola, single Pergola.
Harvest Date: End of September until October, grapes are hand-picked this allowing a careful selection of the best bunches.
Vinification: Traditional vinification in modern stainless steel conical tanks consisting of 15 days fermentation on grape skins using in part the earlier crush.
Elevage: Aged in barrels for a period of six months, followed by another six months in large vats. It is then aged for a further 6 months in the bottle before release.

Arusnatico Valpolicella Superiore Ripasso 2015

Arusnatico is a very fresh, elegant an traditional Ripasso made by Corvina 65%, Rondinella 25%, Molinara 10% .
The grapes were grown in the estate’s own vineyards in Valpolicella. The average density of these vineyards is between 3000 and 5000 vines/ha and are guyot trained. The vines are planted on poor soils with a high rock content. Since 2014 the vineyards are organic certified. The  yield is 55hl/ha.
The grapes were hand harvested from mid-September until the second half of October.
The blend for this wine is based on Corvina with small portions of Rondinella and Molinara. After the grapes were destalked and crushed they were led into temperature controlled stainless steel. After the alcoholic fermentation was completed the young wine was run over the pomace of the Amarone for a relatively  short maceration period of three days. During this phase a slight refermentation occurs and the wine takes on more viscosity and extract, which results in a denser mouthfeel in the final wine.
    
After two weeks of maceration with the Amarone pomace the wine was racked off into stainless steel for a natural stabilisation and malolactic fermentation. This was followed by 12 months of ageing in used Tonneaux and a tiny percentage of new French oak.

Brilliant and transparent ruby red. Notes of cherry, violet with a touch of wood. Minerally and savoury palate with lively and succulent red fruit, mainly ripe cherry and blackberry. Long fruit driven, fresh finish with a nice chocolate and nutmeg finish.

Morar Amarone Classico della Valpolicella 2009

Our amarone is based on Corvina, Corvinone and Rondinella.
The grapes were grown in the estate’s own vineyards, Monte Tenda, Monte Crosetta and Rass, in the hills of the village of Fumane. The average density of these vineyards is between 3000 and 5000 vines/ha and are both guyot as well as classic pergola trained. The vines are planted on poor soils with a high rock content.  
The grapes for the Amarone were hand picked from the 24th of Septemper until October 2nd. The selection method is laborious as only the best part of each bunch is being picked.
After the grapes were picked they were dried for 90 days. Alcoholic fermentation took place in temperature controlled tronconic stainless steel tanks with daily pigeage. The wine remained on the skins for a total of 40 days and went through malolactic fermentation in stainless steel.
After Fermentation the wine was racked off the skins and the gross lees into large oak casks of 30 hectolitre in which it was aged for 33 months. After bottling the wine underwent an additional 12 months of ageing in the estate’s cellars.

 This amarone is intense garnet red. Perfumed and elegant, with dark cherry, balsamic, pepper, nutmeg and cinnamon notes. Great freshness and succulence on the palate, with lovely tannic grip. Repays and deserves extended cellaring.

MELILOTO 2015

The Recioto della Valpolicella is one of the great italian sweet wines.

ECHNICAL INFORMATION
 
Grape varieties: Corvina 70%, Corvinone 25%,Rondinella 5%.
Vineyard area: Monte Tenda, Monte Crosetta, Rasso: On the top of limestone hills in the Fumane and San Pietro in Cariano areas where the soil is ideal for the production of great red wines.
Yield: 7 tonnes (3000 to 5000 vines per hectare).
Training system: Guyot, double pergola, single pergola.
Harvest Date: End of September — beginning of October. Grapes are hand-picked. Only the best part of the bunch is kept for raisining on screens under condition of temperature and humidity control.
Vinification: Beginning of February. Fermentation under controlled temperature with selected yeast strains that extract and highlight the wide range of aromas from this jewel of nature.
Elevage: After some time in barrel to harmonise structure and aromas, the wine is transferred into large oak vats to complete the maturation process. It is then aged in the bottle until selected for release.

Total acidity: 5,7 g/l
Sugars: 101 g/l
TASTING NOTE
 
Intense ruby red colour with a slight purple hue. Bitter cherry aromas and sweet tabacco harmonise with undertones of wild berry and cocoa. The taste is both balanced and full flavoured, spicy and satisfying.

Sin Cero - new natural wine by Valentina Cubi

2018 was a great vintage. It has given its best in our Sin Cero 2018. 100% organic, produced with Corvina and Rondinella grapes, it is fermented with indigenous yeasts and produced without added sulfites.
Fresh, fruity, with intense red berries notes, high, clean, pleasant acidity, good minerality.
It is a very nice easy, drinking wine for every day. Come and visit us for a taste.

Ourselves wine

The story of our winery begins in Valpolicella, where Valentina and Giancarlo grew up and met.

Giancarlo’s family has been engaged in the wine growing sector since the 19th century, while Valentina started to develop her passion for oenology after she met her husband.
In 1969 the couple decided to invest its savings in Fumane and bought 7 of the current 10 hectares located in important crus such as Monte Tenda, Monte Crosetta and Rasso.
These vineyards are the most valued assets of this company and only organic agronomic techniques are applied to them.
The organic certification was very close to the heart of Valentina, who strongly desired to achieve it, and is also a firm part of the whole family’s philosophy.
Our goal is to tune in with nature and leave future generations with a better, healthier and richly rewarding environment.
We consider ourselves wine craftsmen.
We produce wines using exclusively our grapes, strictly hand harvested by a team of reliable and skilled collaborators, able to select only perfect bunches which then later will become wine.
During the fermentation process, the winery is filled with an inebriating aroma of wine, fresh fruit and flowers. This is the most exciting time of the year for us and we love to share it with those who appreciate our products and our winery.
Hospitality and sharing are essential values, as well as our willingness to achieve excellent results.
Our approach has not a strictly commercial connotation, but it is always quality-oriented – we analyse and taste our wines before we decide when we should place them on the market, and we also perform a number of rigorous evaluations.
