Tosalet

Capa Collection is a wonderful way to experience new wines. The grapes used for this wine come from a single vineyard located in the heart of El Provencio. This vineyard was chosen for this wine due to the high quality of grape clusters found. The climate is continental meaning that the vineyards are exposed to freezing cold winters sometime resulting in a thin blanket (una capa) of snow. During the summers the vineyards are exposed to very warm and dry conditions with very little precipitation ensuring concentrated ripe fruit.

Sedosa

WINEMAKING
The grapes are manually harvested in the early morning. Then they are de-stemmed, crushed, and put into 20.000L stainless steel tanks and free run juice immediately drained off the skins. Fermentation at 14-16ºC during 20 days in stainless steel.

TASTING NOTES
Pale Pink Rose with giving aromas of strawberry, fresh-cut watermelon and rose petal, finishes nice acidity and minerality on the palate. This wine is just as giving in the garden as in the dining room.

Gran Castillo Rocio

WINEMAKING
Harvest is done by hand in the early morning in order to have cool grapes. grapes are pressed by latest technology of pneumatic presses, which is slow and gentle to the grapes, as well as protects them from oxidation. Cold settling for 24 hours, racked off its gross lees and inoculated with a neutral yeast strain in stainless steel tanks in order to preserve natural fruit character. the malolactic fermentation is impeded to retain a vivid natural acidity. once the primary fermentation is complete, the tanks are analyzed and our winemaker will make the blend for the base wine for. At this stage the alcohol is approximately 10%. once the new Cava blend is made, the wine is bottled along with yeast, sugar, nutrients and bentonite and the wine is ready to undergo secondary fermentation. After 4-6 weeks all sugar is consumed, CO2 is created, alcohol level reached 12,3% and the lees sediment. The wine is aged on its own lees, which gives the wine a creamy palate as well as softens the mousse of the final wine. After 9 months the bottles are riddled and disgorged. During disgorgement 6 grams of sugar is added to each bottle giving a final residual sugar concentration of 8 gr/l.

TASTING NOTES
A light salmon pink color is obtained from a short skin contact prior to primary fermentation. Fine and persistent bubbles we perceive a pleasantly intense aromas of red berries, exotic citrus fruit reminiscent of mandarins and blood orange, rich butter croissant, resulting in a cava that is mild and well balanced in the mouth.

Organic Tempranillo

WINEMAKING
The grapes were carefully selected and manually harvested from mid to the end of September. Gentle destemming and crushing. Cold soaked at 5ºC during 72 hours, including 15% saignée to concentrate the musts. Temperature controlled fermentation and maceration beginning at 18-20ºC during the first 2/3 and finishing at 25-26ºC towards the end of the fermentation in stainless steel tanks during 15-18 days. 20% of the wine has been aged in French oak barrels for 4 months.

TASTING NOTES
Brilliant, dark cherry red colour with violet hue. Intense rich aromas of sweet strawberries, mature plums and raisins with a hint of tobacco, dark chocolate and minerals. Rich and juicy attack on the palate of fresh ripe berry fruits combined with gentle notes of toasted oak and a refreshing acidity and soft velvet tannins. Full bodied wine with a long aftertaste.
