The Merlot variety, with its naturally lower tannin and acidity levels is considered as the smoothest noble grape variety. The Hoya de Cadenas estate with its unique micro climatic conditions combined with clay and limestone soils caters for the perfect location to produce evenly ripe and aromatic Merlot grapes. The cool night time temperatures ensure a prolonged ripening season, providing a well structured development of tannins and polyphenols.

Vinification is carried ouut in stainless steel tanks at a temperature of 25ºC fro two weeks. The maceration of the skins is subject to a meticulous controil to extract the best expression of the varietal. It is aged for 4 months in American oak barrels and 3 months in French oak barrels. The barrels used are medium toasted, which allows very smooth and elegant wines to be produced.
