Fermentation takes place at a controlled temperature of 17° - 18°C, then the wine rests in stainless steel until spring. TASTING NOTE Bright straw yellow-greenish tones. Delicate bouquet with wildflower, orange blossom and white peach tones. Dry, soft and velvety with bitter almond flavour, typical of Friulano wine. SERVING SUGGESTIONS A classic match with Prosciutto (Italian ham). Try also with seafood and fish, veal, pork and Asian/spicy dishes.
GRAPES: Pinot Grigio PRODUCTION AREA: From Friuli, the homeland of Pinot Gris ASPECT AND ELEVATION: 150-350 meters above sea level SOIL TYPE: Moranic TRAINING SYSTEM: Guyot PLANTING DENSITY: 5500 vines per hectare HARVEST PERIOD: Second half of August ALCOHOL CONTENT: 12% vol RESIDUAL SUGAR: 10 g/ lit TOTAL ACIDITY: 5,2 g/ lit SERVING TEMPERATURE: 6° - 8° C RECOMMENDED GLASS: Medium-sized, tulip-shaped glass AGEING POTENTIAL: Two to three years FORMAT (ML): 750 WINEMAKING PROCESS Grapes are softly pressed and the obtained must ferments at about 16° C. Second fermentation by Charmat method in stainless steel with selected yeasts for four to five months. TASTING NOTE This dry white wine has a straw yellow color with an elegant and persistent perlage. Intense smell, clean, with orange blossom hints. Highly smooth and elegant taste with a hint of bread crust, the acidity is present and balanced, it has good persistence. SERVING SUGGESTIONS Excellent as an aperitif, and ideal with pasta and rice; dishes based on fish and shellfish. Also perfect with white meats, boiled or grilled fish and souffle?s.
