After harvest by hand, alcoholic fermentation is made around 25°C in stainless steel tanks with skin contact for five days with daily overpumping. Fermentation is followed by 10-12 days of maceration, followed by malolactic fermentation. Part of the wine is matured in French oak for 3-4 months.

Chocolate Tube Primitivo

Food pairing: This wine goes best with grilled meat, game and cheese. Best served at 18° C.

Production and maturation: The grapes are manually harvested in Puglia during the second decade of September, when the berries are already in a light overripe phase. The reason is to grant the production of a deep red color wine, rich in alcohol with ripe and sweet tannins and notes of cherry liqueur. Vinification takes place in wooden and stainless steel fermenters of small capacity (10-50-100 hl) at controlled temperatures of 25-28 C° with 7-10 days skin contact. After the malolactic
fermentation the wine matures for 6 months in 225 liter barriques made by a special selection of French and American oak and long toasted, so to release notes of white and dark chocolate into the wine. Only light filtration before bottling. May be stored for 3-4 years.

Raccolto Nero D'Avola-Cabernet Sauvignon /DOC Organic

Production and maturation: The two varietals are fermented separately in stainless steel tanks. Nero d'Avola ferments during 5-6 days at around 25°C and Cabernet Sauvignon fermentation process is similar, only to differ in the temperature of fermentation which is slightly higher. During fermentation both parts of the must are daily overpumped. After the separate malolactic fermentation in stainless steel tanks, half of Cabernet Sauvignon is matured for a period of time in oak, while Nero d'Avola is only matured in stainless steel tanks. When the wine has reached the satisfactory level of structure decided by the winemaker, the two parts of the Cabernet Sauvignon are blended. Thereafter the last blend is made of both Nero d'Avola and Cabernet Sauvignon which results in the final cuvée.

Production and maturation: Raccolto Corvina is made of 30% dried grapes coming from all over the Veneto region which have been set to dry for about three months. The remaining 70% of the wine has been fermented in large oak barrels. After the first fermentation, the grapes are mixed together and fermented for a second time. Finally, the wine is matured for about 8 months in French oak barrels.

Production and maturation: The grapes are organically grown and the varieties are Tempranillo and Bobal. The vineyards are located in the northern part of the province of Albacete in Castilla la Mancha. The grapes has been pressed gently and then macerated with the skins for 18 hours. The must is fermented at a low temperature to maintain the freshness and flavors of the fruit. Finally, the wine has been aged for 6 months in temperature-controlled stainless steel tanks.

Fermented in stainless steel tanks for 7- 10 days and then a portion taken to barrel for malolactic fermentation,
with the balance being completed in tank. Matured in small French barrels for more than a year before being blended and gently fined.

Malolactic fermentation in stainless steel tanks and then matured for almost a year in small French barrels to further aid in the development of structure and soften the tannins.
