Ninquén

This is not just a wine. It's not just a grape variety or a terroir. It's a concept that sums up our entire philosophy of quality, handcrafted winemaking.

A Hand Crafted Wine from Chile’s First Mountain Vineyard.

Founded in 1998, Ninquén, meaning “Plateau on a Mountain” in a native dialect, became Chile’s first Mountain Vineyard. This inimitable terroir, located in the heart of Colchagua -Chile’s most renowned premium winemaking region- provides exceptional grape growing conditions for the production of ultra premium red wines. 

The wine is the outcome of a judicious “Triple Selection”. The process begins in the vineyard, with grapes from specific blocks and rows, that are placed on a table where they undergo another rigorous classification. The grapes enter the small fermentation tanks gravitationally and the wine is then aged for 20 to 24 months in new French barrels. Finally, the best is chosen to give life to the perfect blend.

Talent & Terroir Shiraz 2016

RANGE INFORMATION
This wine range portrays the inspiration found by the winemaker in the varying terroirs of our area and harnessing his personal talent and skills to optimise the characteristics the grape varieties. The gifts of nature are unlocked by understanding the terroir and crafting exceptional varietal wines with each new harvest. In his pursuit of perfection, the winemaker achieves a special harmony with nature in a creation he can be proud to call his own.

BACKGROUND
The vineyards of some 8 hectares in extent grow in ideal granite and shale soils in the Voor-Paardeberg area of the Cape Coastal Region, receiving the cooling effect of coastal breezes during the afternoon.

WINEMAKING
The grapes had 48 hours of cold maceration and alcoholic fermentation started naturally.  Once a fermentation level of about 2° Balling had been reached, inoculation with a commercial yeast took place before alcoholic fermentation at 18 - 20°C. Two weeks’ skin contact was allowed post-fermentation. The wine was matured for 12 months in second and third fill small French oak barrels. Final blending took place from the best selected barrels.

TASTING NOTE
This elegant wine, with its deep ruby colour, shows a light smoky nose with a dash of vanilla and spice. Well-balanced on taste, with fruit-cake complexity and a soft white pepper spiciness carrying through in the lingering, silky aftertaste. 

Enjoy with spare ribs or venison.

One Formation Chenin Blanc/Sauvignon Blanc/Grenache Blanc 2018

BLANC
RANGE INFORMATION
The uniqueness of each harvest is captured in that year’s range of One Formation wines. These exceptional blends are created from grape varieties that perform the best in specific regions during the new season. With only one batch made of each blend, wine lovers can look forward to a singular vintage year on year.

BACKGROUND
The Chenin blanc vineyards mainly grow in shale dominated soils, with a proportion situated in the granite soils of the Drakenstein area, while the Sauvignon blanc from Lutzville, close to the West coast of South Africa. In the dry but cool 2018 season the Rhone cultivar, Grenache blanc from the shale soils on the slopes of the Paardeberg mountain performed well. The Grenache blanc’s rich palate with juicy pear flavours and creamy aftertaste complimented the elegance of the 2018 Sauvignon blanc and Chenin blanc wines.

WINEMAKING
The winemaking was handled reductively, with small carefully selected batches of Chenin blanc, Sauvignon blanc and Grenache blanc separately fermented. The Grenache blanc went to third fill barrels for three months  to add to the complexity of the palate and the final blend left on the lees for another 2 months with regular batonnage before bottling.

TASTING NOTE
This fresh expressive wine from selected vineyards shows layers of green apple, kiwi and gooseberry on the nose. Enjoy the well balanced lively green tropical and pear flavours that lingers on the palate with chicken, pork and seafood.

BACKGROUND
The grapes for this wine come from Philadelphia, close to the Atlantic Ocean. The cool sea breezes and deep soils made this area known for high quality Sauvignon Blanc’s.    

WINEMAKING
The grapes were harvested at 21.5 - 22° Balling. The wine was made reductively and extended skin-contact of six hours was allowed, before being left on the lees to further develop character for three months. 

TASTING NOTE
This fresh expressive wine from selected vineyards shows layers of green apple, kiwi and gooseberry on the nose. Enjoy the well balanced lively green tropical flavours that lingers on the palate with chicken, pork and seafood

BACKGROUND
This wine is made from selected Cinsaut grapes from dryland, old bush-vines growing in a combination of granite and shale soils in the Paardeberg area – conditions eminently suited to achieving the elegance and character this variety is capable of through meticulous cellar techniques. The grapes were hand-harvested during the cool early morning hours at 21 - 22° Balling.      

WINEMAKING
Only four hours of skin contact were allowed before fermentation, which resulted in the appealing light blush colour and balance. The grapes were fermented at 13°C to enhance crispy freshness and to express the extraordinary aromas from these old vines.

TASTING NOTE
This fine wine displays a lovely salmon hue and an inviting nose with hints of rose petals and cherry fruit. On taste, a delicate balance of fruit and a touch of white pepper spice, with light savouriness and a creamy mouth-feel, the 12.5% A/V being well integrated. Long, clean and spicy finish.

 Linefish, gnocchi and white meat dishes.

CappupinoCcinotage 2018

WINE DESCRIPTION
The quintessential earthiness and sweet red berry flavours of Pinotage are balanced with softer mocha & ground coffee flavours resulting from more time spent in the barrel. 

The result is a seductive ‘coffee’ styled Pinotage known as CAPPUPINOCCINOTAGE which have become popular the across the world.

BACKGROUND
Boland Cellar’s Pinotage vineyards deliver fruit for different styles of wine from our varying climatic zones within the Paarl and Coastal areas.

The grapes selected for our Cappupino ccinotage come from deep shale soil vineyards that ripen later, resulting in a longer hanging time and producing super ripe fruit. This together with the history of which blocks produce the best results for this coffee style Pinotage, gives us the ability to craft a wine that delivers outstanding results with heavy toasted French oak staves.

The grapes must have dark pip ripeness preferably combined with sweet plum and succulent ripe fruit.  Grapes were predominantly selected from the Paardeberg area which delivers fruit without any jammy notes. 

After careful selection, the grapes were harvested from different growers, early in the morning, to retain the robust fruit flavours.

WINEMAKING
The grapes selected from various growers were vinified separately to retain unique flavour profiles and create building blocks for the final product. After crushing, the grapes underwent a two-day cold-soaking period and was inoculated with a South African yeast strain.

The wine fermented cold and slowly and was taken from the skins at about three degrees balling before adding selected French oak charred wood staves that delivers rich coffee and chocolate characters on the palate.  Due to further fermentation on the wood, good wood tannin interaction was achieved.  Uniquely, we like to follow a style that expresses cultivar fruit in balance with the oak.

After malolactic fermentation, the different building blocks were carefully blended to create our own unique coffee style Pinotage.

TASTING NOTE
The Boland Cellar Coffee-Style Pinotage delivers layers of dark prune, plum and sweet blueberry flavours with a prominent cedar French oak finish, reminiscent of Mocha Java.  Due to the beautiful extraction of Pinotage fruit flavours, the oak was well integrated and delivered a wine with a creamy lingering finish.

Five Climates Merlot 2017

RANGE INFORMATION
The FIVE CLIMATES range of single cultivar wines are distinct regional wines, blended artfully from five different climatic areas in the renowned Paarl wine region.

The style is marked by the sunshine & maritime influence of the nearby ocean that results in fresh, fruit-driven wines that are popular with a broad target audience.

BACKGROUND
Vineyards are situated in the prime Paarl and surrounding area with varying climatic zones from where grapes can be masterfully selected for our Five Climates range. 

Granite soil provides freshness to the wine, while shale soil contributes to a fruity, full mouth-feel. 

The grapes were selected from different climatic zones around the Paardeberg /Paarl and cooler coastal area of Philadelphia.  Vineyards are situated predominantly on north- north eastern slopes, resulting in an elegant, fruit-driven wine.

The grapes ripened at different times, illustrating the diversity of temperature between the various climatic zones.

WINEMAKING
The grapes were harvested at approximately 24 degrees Balling followed by de-stemming and cold-soaking for 24 hours. Fermentation started after selected commercial yeast was added. Alcoholic fermentation lasted for fourteen days after which the wine went through malolactic fermentation in steel tanks and second fill barrels to ensure a softening of the phenolic compounds, resulting in an elegant smoothness on the palate.

TASTING NOTE
This elegant Merlot shows layers of fruitcake and cherry on the nose which follow through onto the palate. An elegant wine with typical Merlot flavours. Delicious with red meat roasts and stews - or simply on its own.

Granite soil provides freshness to the wine, while shale soil contributes to a fruity full mouth-feel.

The grapes were selected from different climatic zones around the Paardeberg /Paarl and cooler coastal areas of Philadelphia.  Vineyards are situated predominantly on north- north eastern slopes- resulting in an elegant, fruit- driven wine.

The grapes ripened at different times illustrating the diversity of temperature between the various climatic zones.

WINEMAKING
Harvested at 22 degrees Balling, the grapes reached the cellar in perfect condition to ensure cultivar flavours were retained.  After crushing, skin contact was allowed for 4 hours.

The juice fermented between 12 and 15 degrees Celsius for a period of twenty days.  Fermented dry, the wine was left on the lees for a further three months, resulting in a wine with a full, creamy aftertaste.

TASTING NOTE
This crisp, fruity Chenin Blanc is characterised by juiciness, freshness and upfront aromas.  It presents layers of lime, citrus and fresh guava aromas.  An elegant wine with typical Chenin Blanc flavours - a regional favourite.

Delicious with chicken, curry or salads – or simply on its own.
