Its bright and intense greenish yellow does catch the eye. Clean and shin- ing, with white fruit aroma presence together with some honey and pastry notes. Unctuous and luscious in the mouth, but always fresh, light, pleasant and with a long finish. It is the result of a careful production process: harvest in September after full ripening, fermentation in new French oak barrels at controlled temperature and three-month aging with battonage on fine lees in similar barrels. Afterwards, the wine is kept in the bottle for at least 6 months. This is our Chardonnay, an aromatic and soft white, best tasted between 10º and 12ºC.
A versatile wine for almost every palate and pairing with almost every food. An elegant and very balanced blended wine, it boasts the best from each of our grape varieties. The blended varieties change every year in search of the best grapes of our vineyard: the fleshy Syrah, the fruity and floral Merlot and Tempranillo, the long-lasting Cabernet Sauvignon. After one year in barrel, it gathers a complex but well assembled nose. It offers ripe berries –blackberries and blueberries– together with notes of wood, toast, spice and, in the back- ground, an earthy aroma. It is soft on the palate, pleasant and very balanced, with an intense cher- ry red colour and eye catching dark crimson nuances. It reaches its optimal tasting temperature at 16ºC.
For many this is the best Cabernet in Spain. Our veteran is a wine as elegant as it is complex. Its more than 25-year- experienced vines together with a late harvest after a perfect ripening give shape to a wine rich in balsamic notes, spices and minerals. Its singular spirit originates in a slow and meticulous production process: long macerations, 15-month aging in French oak barrels and fermentation in wooden vats. Also, it rests in the bottle, aging for a long time before going on the market. For its tasting, it is recommended to serve it between 15º and 17ºC and wait calmly for it to speak out. We will find it smooth but powerful on the palate, always leaving a long finish.
Dehesa del Carrizal estate is placed in the middle of the Montes de Toledo, near the Cabañeros National Park, between Tajo and Guadiana basins.
Dehesa del Carrizal is a Vino de Pago, the highest category according to Spanish wine law. It is a DOP (Denominación de Origen Protegida – Protected Designation of Origin) reserved for those few wineries and vineyards which carry out the whole process –from the grape to the bottle– within the limits of the Pago or estate. The unique location, soil and climate are the key to obtaining exceptional wines.
