Alcohol degree: 15° Natural (No alcohol added).
Varietal Designation: Pedro Ximénez.

Ageing: Aged for 9 years in American oak barrels in controlled cellars with regulated temperature and atmosphere, using the traditional “solera” ageing system and the famous “flor” film process.

Tasting notes:

A light yellow colour, fruity clean bouquet, with aromas of flower and dried fruits. It has a light and pleasure flavour. Easy to drink on its own, for its noble and exceptional taste, or accompanied by olives, “tapas”, aperitifs, salads, shell fish or pasta. It should be kept in a cool place and served at a temperature between 7º and 10°C for appreciating its exceptional flavour.

Crianza: Durante un periodo de 9 años en botas o toneles de roble americano en naves de crianza con temperatura y ambiente controlados mediante el sistema de crianza a través del famoso proceso bajo velo flor.

Nota de cata: Color amarillo pálido, y de aroma almendrado. Seco y levemente amargo a la boca. Para beberlo solo, por su nobleza y bondad, o bien, acompañado de tapas, entremeses, ensaladas, carnes blancas, pastas o mariscos. Debe conservarse en lugar fresco y servirse a una temperatura entre los 7 y 10º C.

Ageing: A great complex wine thanks to its double ageing process. Firstly, through a biological process known as “velo flor” in our “soleras” of Fino Andalucía, and secondly, through an oxidation process during 25 years in old American oak barrels in our controlled cellars with regulated temperature and atmosphere.  

Tasting notes:

Between old gold and tawny yellow, with very intense perfumed aroma, pungent and hazelnut, where the years and years of ageing can be appreciated. Ideal for tasting before lunch as an aperitif. On its own or accompanied, it is also exceptional for combining with soups or between courses. It should be served at a temperature between 10ºC and 12°C.

Crianza: Durante un periodo de 25 años en viejas botas o toneles de roble americano en naves de crianza con temperatura y ambiente controlado, resultado de envejecer el vino por oxidación.

Nota de cata: El color oscila entre el oro viejo y el amarillo moreno, su aroma perfumado es profundo, punzante y avellanado, su sabor suave y lleno a la vez. Ideal para tomar a media mañana, incluso como aperitivo o entre platos, buen acompañante de sopas, consomés y estofados. Debe servirse a una temperatura entre los 10 y 12º C.

Ageing: Aged for 25 years in old American oak barrels, the grape juice or “mosto” is derived from the pressing of the “Pedro Ximénez” grape variety. Those grapes undergo a natural sun-drying process firstly in the vine and secondly once taken off the vine in order to obtain the best raisins.

Tasting notes:

A sweet natural wine, dark ruby in colour, full of aromas ranging from raisins, dates and bergamot to smooth reminders of the oak. It is a fragrant and treacly combination to be tasted on its own or with ice and sparkling water. It makes a unique and exclusive dessert, but it can also accompany ice-creams, cakes and certain dishes such as caviar, sushi, smoked salmon or lamb. It should be served at a temperature between 7º and 10°C.

Nota de Cata: Vino dulce natural, de color rubí oscuro, pleno de aromas que van desde la pasa, al dátil y la bergamota hasta suaves recuerdos del roble. Une fragancia y untuosidad y, solo o con unas pastas, es un postre único, exclusivo, pudiéndose también servir como delicioso refresco con hielo y seltz. Además, combina a la perfección con helados, dulces y otros platos como caviar, sushi, salmón ahumado o cordero. Debe servirse a una temperatura entre los 7 y 10º C.
