We have rediscovered a native grape called Pecorino and created a sparkling brut that offers a wealth of new emotions.
Grape: Pecorino Grape history: Vine of uncertain origin, the Pecorino has been grown for centuries in the central regions of Italy, especially Marche and Abruzzo, where it is known also with different denominations. The bunch is medium sized, long, cylindrical – or pyramid-shaped, often with wings, with widely spaced berries. The maturation is medium-early, and is usually harvested in mid September Winemaking: The whole grapes are chilled in our exclusive cooling tunnel with immediate drop in temperature and consequent cold maceration of the skin peels;· After destemming, cold maceration on the skins in stainless steel vats and soft crushing in inert environment. Cold static decantation for 24 – 48 hours Sparkling method: The Charmat method is used. Organoleptic evaluation and food pairing: At sight a lightly loaded straw yellow colour with a subtle and persistent perlage. it has an intense scent with hints of tropical fruit and flowers. Likewise, the aromatic scent perceived continues and develops on the palate becoming full and profound. The flavour is pleasantly dry with an elegant fruity character. In order to enjoy the wealth and complexity of the aroma, we suggest to drink as an aperitif accompanied by various hors doeuvres. Ideal paired with flavours such as raw fish dishes such as tuna, squid or octopus or a turbot carpaccio or shell fish in general. A perfect accompaniment for fish risotto or pasta dishes, fresh cheeses and baked fish. Serving temperature: 6/8°C

This is fine winemaking at its purest, most fundamental level.
Grape: Trebbiano DAbruzzo Grape history: Trebbiano is one of the worlds most widely grown white wine grape varieties, with an ancient history. The grape is thought to originate from the East Mediterranean, and was known by the Romans. Winemaking: Spontaneous fermentation starter due to yeasts naturally present on grapes Fermentation: In concrete tanks Ageing: In concrete tanks before bottling followed by 3 months in bottle. The wine is bottled without being filtered nor stabilized. Organoleptic evaluation and food pairing: This wines strike your senses in all of their aspects beginning with their appearance. The aroma and palate are arresting, complex expressions that defy description or conversely, invite a myriad of words that can never quite get at everything thats going on. The end result is an amazingly complex and profound wine that can age for years, even a decade or more. Lemon-gold color, aromas of ripe lemons and complement undertones of herbs. On the palate, crisp acidity and a full body lead to a pleasing finish where layers of complexity are gradually unveiled. Serving temperature: 8/10°C
Appellation: Terre di Chieti IGP Grapes: Cococciola Production area: Province of Chieti The Cococciola is a rare indigenous grape, only grown in the province of Chieti, under the traditional “tendone” overhead trellis system. Its sweeping sapidity affords an enthralling and modern freshness.
Grape: Cococciola Grape history: This native vine is cultivated mostly in the municipalities of Vacri, Ari and Rocca San Giovanni, in the province of Chieti, and its rarely found in other regional wine zones. The bunch is small, often winged and irregular, compact, and ripens late in the season, around the first part of October. The wines are light straw yellow in color and have medium structure, with high acidity that lasts for long time with a typical light grassy, persistent aroma. Winemaking: The whole grapes are chilled in our exclusive cooling tunnel with immediate drop in temperature and consequent cold maceration of the skin peels. After destemming soft crushing in inert environment. Cold static decantation at 14 °c for 24 – 48 hours. Fermentation: Inerted stainless steel tanks at 8 – 11 °C Ageing: 3 months in stainless steel Organoleptic evaluation and food pairing: The wine has a pale straw yellow with greenish, almost crystal hues. Fruity aroma with citrus, delicate hints of green apple and white flowers. It has a lingering and very fresh balanced taste, dry, savoury and with a good structure. it can be successfully matched with hors doeuvres and raw fish dishes, all starter and main fish dishes, fresh cheeses.
