DOKAZ

Winemaker’s Tasting Notes:
Dokaz Cabernet Sauvignon has a beautiful deep purple color. Bright and juicy berry fruits coat the palate and mingle with brambly spice, hints of black olive and anise. Full body with velvety, fine, grape and oak tannins add to the structure and flow onto the long, fruitful and spicy finish.
Extractive wine with feel of fruitiness at the same time tipical for Cabernet from Sumadia. Dokaz has a great potencial for development and long aging in the bottle.

Winemaking:
The fruit for Dokaz 2015 was hand-harvested during the cool early morning hours to ensure that the concentrated fruit flavors were captured at the peak of ripeness. Upon arrival at the winery, the grapes were de-stemmed, moved into stainless steel tanks and slowly warmed to fermentation temperatures. Following the completion of primary and malolactic fermentation, the wine was drained and gently pressed onto a barrique barrels made from Serbian oak (225 liters) in which is aged for 24 months. Thereafter the wine was blended in large oak barrels for a period of another six months.

Food Pairing Suggestions:
Grilled meats, red sauces, bleu and cheddar cheeses, blackberry cobbler, filet mignon.

MORAVA

Winemaker’s Tasting Notes:
On first impression evolving primary herbal aromas, then come hints of dried meadow flowers. This Morava poured into the bottle its flavor reflects precisely the climate from which it originates. It is a unique character, with a dominant aroma of white vineyard peach. Medium body and harmonious acid, the wine of the new era and reflects a combination of skill enologists and quality of grapes.

Winemaking:
The grapes for Morava 2016 was hand-harvested during the cool early morning hours to ensure that the concentrated fruit flavors were captured at the peak of ripeness. Upon arrival at the winery, the grapes were gently pressed and fermented at cool temperatures in stainless steel to maximise fruit purity and varietal character. Morava enables long maceration for a period of seven hours, and the mixing process on lees for a period of two months.

Food Pairing Suggestions:
White fish, Chicken breast in mushroom sauce, Green Salad with dressings.

Winery belongs to Šumadija wine area, Krnjevo vineyards and from winery extends the wonderful view over the valley of the river Jasenica and up to mountains Avala, Kosmaj, Bukulja, Venčac, Oplenac and Rudnik.
