The “first wine” of each vintage... Our Novello is born with sangiovese, malvasia nera and ciliegiolo, using the technique of carbonic maceration, the grapes are intact and not stripped. The particular alcoholic fermentation that occurs, called “intracellular”, develops in a hermetic tank saturated with carbon dioxide. The result is an extremely fruity, soft and harmonious young wine of a ruby red color with violet hues.

The scent is intense, vinous, with fruity (berries, blackberry, raspberry and blueberry). To the palate it’s soft, round and balanced with the typical feeling of carbonic maceration that enhances the flavors of spicy varietal.

Accompany any dish, with the exclusion of overly spiced dishes and desserts.

The grapes are fermented “in rosato” , slightly macerating the skins with the must. The first fermentation is carried out in stainless steel tanks and the second takes place in pressure tanks for 45 days. Both filtration and bottling is carried out cold.

Cherry red colour with glints of coral, fresh,winy and slightly fruity fragrance; with a dry, light and pleasantly sourish flavour.

With light starters, first courses and afternoon snacks. Should be served between 8° - 10° C.

This is the product that makes Tuscany one of the most famous winegrowing regions in the world and with an especially strong and long tradition refined over the years. The grapes come from the towns of Montespertoli, Gambassi Terme and many neighboring towns, in which our parners have planted over 1,000 hectares of vineyards. A surface that allows us to be the first manufacturer in the world of chianti. The wine is made with the latest technology that tend to limit their contact with oxygen and enhance all of the characteristics of the Chianti wine. Depending on the vintage, the grape maceration may be prolonged, even 25-30 days.

The wine that is obtained shows an intense ruby red color. Dominated by hints of red fruits like blackberry and raspberry with hints of violet and iris. Full of flavor and fullbodied, moderately tannic, with a pleasant aftertaste of red fruits.

This wine goes well with grilled meat, poultry and cheese.

The Cantina Sociale Colli Fiorentini has its production center in the valley by the river Virginio in the Municipality of Montespertoli where for centuries man and his attachment to the land of the vineyards and olive groves has made the backbone for the economy of this farming. The co-operative established in 1972 acquired in 1988 the Cantina Sociale Colline d’ Elsa of Gambassi Terme and in 1993 the mill co-operative Colli Fiorentini of Montespertoli. Today after 40 years, more than 850 companies , mainly located in the areas of production of Chianti DOCG, Chianti Classico, Tuscany IGT and Tuscany IGP oil, give their crops to the production sites of the co-operative.

The Cellar makes wine from local and international grapes such as sangiovese, canaiolo, colorino, ciliegiolo, malvasia, merlot, cabernet, chardonnay, etc.., with knowledge, skill and dedication the members grow these grapes in their own vineyards; today there are about 1500 hectares.

Over 8,000,000 kg . of grapes are produced into wine according to traditional methods and with the latest technology, a result of investments in the years of more than 10 million euros.
The wines meet the appreciation of consumers in the domestic market and foreign market.

By implementing a policy of always pointing to the high quality with the right price for the consumer, with a hint of pride the Cooperative stands as the world’ s first manufacturer of chianti.
Particular attention was paid to environmental protection, the first Co-operative Tuscan winery that is equipped with a photovoltaic system that allows you to produce and use clean energy.

Of particular importance is the production of extra-virgin olive oil, conferred by the members and obtained from the olive processing at the mill of the co-operative, with an average annual amount of 300,000 kg.
