FALANGHINA DEL SANNIO DOP

FARMING OF THE GRAPES
This wine is made from grapes grown in limestone-clay soils at an altitude of 150 - 350 m.a.s.l. in the area of Solopaca located on the slopes of the Regional Park of Taburno-Camposauro. An espalier farming system is employed giving a yield of 90 qq/ha from vines with an average age of between 5 and 15 years. The harvest takes place in the second half of September.

VINIFICATION
The grapes are harvested by hand and conferred to the winery; there follows the de-stemming and soft pressing of the grapes. The wine is made using the technique of cryo-maceration with fermentation taking place in stainless steel tanks for about 15 days at a controlled temperature. The product is bottled during the month of March.

FEATURES AND COMBINATIONS
The color is straw yellow; it has a rich aroma with hints of tropical fruit and characteristic floral perfumes. The taste is fresh, dry and well-balanced. Excellent pairing with appetizers and fish dishes, pasta and white meats, grilled fish and vegetables, cheese, etc..

The Cantina di Solopaca is one of the oldest farmer’s cooperative all over the Campania. With its production of more than 120 thousand hectrolites of wine it is set at the first places in the whole regional production.
The vineyards are located in a wide area that, starting from Solopaca’s territory, involves other 16 neighbouring disctricts, reaching a total planted area of about 1300 hectares. In this territory is grown the Solopaca DOC, the first wine which got the D.O.C. guarantee in 1974. The grown varieties are the Falanghina and the Aglianico, local Sannio Beneventano vines, but also the Greco and the Fiano. In recent years vineyards linked to the tradition have also been rediscovered such as the Coda di Volpe and the Barbera.
Solopaca stretches at the Taburno Camposauro Regional Park foot, in the province of Benevento, in an area formerly known as Sannio, ever devoted to the winegrowing. On the Solopaca hills was born the fabulous “Solopaca D.O.C.” whose story is lost in the dim and distant past…..even Joachim Murat, french general and King of Naples, who tasting the Solopaca wine, extoled its merits until comparing the impetuous power of the wine to that of his brother in law Napoleon.
The grown grapes are harvested by traditional methods and brought into the Cantina where, after a careful selection, are made wine and bottled. The enological center is equipped with forefront wine making and bottling tools and with a wine cellar where occurs the red wines refinement. The company i salso equipped with an autoclaves room where the sparkling wines are made. The structure is completed by the storehouses in which the wines are stored, a multi purpose-room and the company point of sale.
The Cantina di Solopaca offers a wide selection of wines, divided into product ranges, distributed both in Italy and abroad, ready to satisfy all the different kinds of consumption, from the daily use to the most sophisticated catering, combining the oldest tradiction and the most modern tecniques.
Today the Cantina produces the masculine and seductive Rosso D.O.C., the full-bodied and smooth Aglianico, the sparkling and delicate Amabile, the mysterious and cheerful Falanghina, and the noble and aristocratic “Spumante D.O.C.”.
