Production area: Impruneta, Greve in Chianti, 15 km south of Florence.

Soil: calcareous, clay and marl mix.

Production per plant: due to poor soils and grape thinning, we get an average production per plant approximately 1 kg, an amount that achieves a perfect phenolic ripeness and concentration as well as sugar.

Grapes: Sangiovese 100%

Haervest: by hand in small containers, to maintain the integrity of the fruit. For OTTOMANI  Sangiovese only the best grapes are used (small size, perfectly ripe), chosen one by one in our olds vineyards (over 40 years).

Fermentation: spontaneous, conducted by yeasts naturally present on the grapes (no yeast inoculum).

Production area: Impruneta, located 15 km south of Florence; traditionally a production area of great Tuscan red wines.

Soil: calcareous; mix of clay and marl; poor soil, vocated to the production of high quality red grapes.

Production per plant: thanks to the poor soil and to the slimmings, we obtain a medium production of 1kg; quantity that permits to get a perfect maturation and a perfect phenolic and sugar concentration; indispensable characteristic for the production of high quality wines.

Production per plant: 2Kg ca., quantity that permits to the grapes to reach a perfect maturation.

Grapes: Trebbiano 60%, Malvasia bianca 40 % . The grapes come exclusively from vineyards of more than 40 years.

Company details

Ottomani was born in 2006 as a four friends’ project, who decided to start their own venture after graduating in oenology at the University of Florence and following different job experiences in important wineries in the area. Slowly, but steadily, we set up a little farm for the production of our wine and olive oil.

Working with autochthonous varieties only and using biological-biodynamical techniques of cultivation and winemaking, we decided, from the beginning, not to use any chemical, preferring to work exclusively with agronomical methods which are sustainable for the environment.

The importance that the we give to the manual work in the fields and to the natural oenological techniques, allows the production of wines and extra virgin olive oil of exceptionally high quality, resulting from the combination of modern and traditional techniques.
