Grape harvest: First ten days of September. Picked by hand
Vinification: Destemming and soft pressing, static settling, cold must ageing in steel tanks for 8 months, sparkling process carried out directly on the must to preserve the varietal aromas without the addition of sugars, filtering and bottling

Ageing: In steel tanks and in the bottle
Alcohol content: 6% vol.
Residual sugar content: 110 gr/l
Overall acidity: 6,8 gr/l

Bianco Infinito ∞ 2015

Grapes: Yellow Muscat 100%
Vineyards Location: Paduan Hills
Grape harvest: from the second to the last week of September. Picked by hand using crates.

Vinification: destemming without breaking the grape berries. Differentiated maceration from 1 to 3 days depending on the aroma quality of the grapes. Light pressing, cold static settling and aroma impregnation for one week at 0°C. Fermentation start up with thermal control set to 16°C. Ageing on yeasts until late Spring, filtering and bottling with in-the-bottle.

Ageing: 6 months in the bottle
Alcohol content: 12,5% vol.
Residual sugar content: 1 gr/l
Overall acidity: 5,5 gr/l
PH level: 3,38
Dry extract: 21 gr/l

Straw yellow, stand outs for its aromatic personality and elegance. The bouquet presents floral notes of magnolia, orange blossom, fruity nose of peaches, yellow fruit, citrus fruit and aromatic herbs. Softness and richness on the palate thanks to a well-balanced acidity and a tasty closure that makes the final complex and pleasant at the same time. Elegant and very persistent, versatile in its pairing. Ideal for batter vegetables, soups based with pumpkin, legumes and mushrooms, risotto and first courses with peas, asparagus and with spontaneous erbs in general, together with white meat and fresh cheeses.

Vinification: Light pressing of the whole grapes, wholly impregnating the free-run must, static settling without added enzymes for 48 hours, fermentation 70% in steel tanks and 30% in oak barrels at a temperature of between 16 and 19 °C

Ageing: 24 months on yeasts

Disgorging: Spring 2014

Alcohol content: 11,9% vol.

Residual sugar content: 6,9 g/l

Overall acidity: 8,9 g/l

Pinot Nero is rarely found in the Euganean Hills and is difficult to turn into wine: we have tried to bring out its characteristic elegance, structure and longevity in this rosé version of the classic method sparkling wine. 24 months ageing on its own yeasts to obtain a sophisticated perlage, an ample bouquet, complex aromas, creaminess on the palate and wave after wave of flowers carried on the wind. The wine harks strongly back to the flavour of the chalky terrain of Terre del Pirio and one is seduced by the sweet spices that transport you to far off shores.
Serve at 6/8 °C.

Company details

The identity of the territory, which has always been at the centre of my research, has proven its great potential when planted with the Yellow Muscat grape variety which here is known as Fior D’Arancio. The origin of the soil is volcanic, rich in trachyte, chalk and clay that in my vineyard are mixed with marl and loam. This is where the name Maeli comes from.

This magnificent National Park in the Euganean Hills, that soars up as if by miracle in the heart of Veneto, plays host to the Pirio hill, 230 meters a.s.l., a place that fascinates me for its abundance of flora and fauna, for its 180-degree panorama of Venice on one side and the Dolomites on the other, but above all for the unique characteristics of the ground made up of a layer of marl penetrating to a depth of 11 metres.

The variety of the land, the steepness of the hills, the varying exposition of the vineyards, the peculiarities of the micro-climate, the temperature excursions of this face as well as the vegetation made up of holly oaks, strawberry trees, fruit trees and olive trees motivated me into finding an expression for it all in this wine.

Here is where Maeli takes centre stage, a reality which has found new vigour in the support given it by the brothers Gianluca and Desiderio Bisol, who have encouraged the search for new expressions in a grape variety that still has so much to reveal.
