La Cavée 2013
Cépages : Grenache, Syrah.
Âge des vignes : Syrah 30 ans, Grenache 50 ans.
Types de sols : Argilo-calcaire caillouteux à flanc de montagne.
Vinification : Hand-picked harvest, hand-made selection/sorting-out/separation of the grapes.
Grenache: fermentation during 21 days, twice-daily reassembled to increase the tannic extraction and the colour.
Syrah: fermentation during 12 days without exceeding 25°C to maintain the aromatic potential. Malolactic fermentation, then 30% of the cuvee is aged during 10 months in new barrels.
Tasting: Deep ruby color with cherry hints. Intense and comple first nose, woody, smoky and slightly spicynotes (cinnamon, vanilia). The attack is round, well balanced. The middle is ample and powerful, presenting an harmonic tannic structure. The palate is on black fruits with spicy notes of black pepper.Long and refreshing after taste.
