MATERNIGO – Valpolicella DOC Superiore

Our mapping of the soils in the large Maternigo property has enabled us to identify certain plots of land that, due to the characteristics of their terrain, their exposures and the results given by the vines, have revealed themselves to be real crus. One of these is the Impervio vineyard, so called because of its steep slope. Farmed according to organic principles like
all the other vineyards at Maternigo, Impervio is characterized by the presence of white and yellow marls, particularly suitable for producing a Valpolicella with a very fresh, well-balanced style. Thanks to the innovative study of soil and plant characteristics we carried out at Maternigo, each individual vine is constantly monitored and the ripening of the fruit is checked on a daily basis. Careful selection of the grapes gives rise to a wine that is both fruity and spicy, with well-modulated structure and concentration and sufficient acidity to give it good keeping potential.

Vineyard Notes
Soil: white and yellow limestone marls of morainic origin, at 400 m above sea level.
Vine density: an average of 5000 vines per hectare.
Vineyard age: 5 years. Cultivation:
Guyot, Pergola and Lyre.
Pruning: 10/12 buds/plant.
Production: 7000 kg/hectare.
Grape varieties: 40% Corvina, 30% Corvinone, 30% Rondinella.

Winemaking Technique
Grape harvest: mid October.
Vinification: non-destalked whole grapes.
Alcoholic fermentation and maceration: 20 days/temperature 20/23° C.
Maturation in 20/25 hl Slavonian oak casks: 14 months.
Creation of the final blend
Bottling and bottle ageing: 6 months.

Description Of The Wine
Color: deep ruby red, clear and bright.
Bouquet: very pronounced fruit. Notes of redcurrants, cherries and plums that give freshness to the wine and meld with mineral, ethereal, spicy and vanilla-like hints.
Flavor: rich, fresh and well-balanced fruit. The concentration of the dry extract is notable and admirably set off by considerable tannic structure, very lively acidity and a level of alcohol that ensure good ageing potential. The retro-olfactory sensations echo those on the nose. This is a long, fresh, concentrated and very elegant wine.
Suited for ageing: it has a long future ahead of it.
Combinations: red meats, game, dry-textured, mature cheeses made with low-fat milk.
Serve at: 16-18° C

This wine is made with grapes harvested in vineyards, located in oldest area of origin – the commune of Monteforte d’Alpone – that with Soave, makes up the classic Soave area. The distinctive winemaking technology employed yields an elegant and velvety wine with a delicate almond-scented nose.

Cultivation: Guyot. Pruning: 12/14 buds/plant.
Production: 6000 kg/hectare.
Grape varieties: 100% Garganega.

Winemaking Technique
Grape harvest: end of August, beginning of September.
Shoprt skin maceration
Alcoholic fermentation: 6 days/temperature 18/20° C.
Malolactic fermentation
Biological and chemical stabilization in tank
Bottling and bottle ageing: 4 months.

Description Of The Wine
Color: yellow with green reflections. Clear and transparent.
Bouquet: strongly and complex fruity bouquet. Very clean and with notes of dry fruits such as almonds. Rich and elegant. Flavor: good body and good acidity. Relatively warm, rounded and well-balanced. Pleasing and elegant. The after-taste confirms the notes in the bouquet.
Suited for ageing: 3/4 years
Combinations: aperitifs, fish, hors d’oeuvres. Serve at: 10-12° C

CAPITEL MONTE OLMI – Amarone della Valpolicella DOC Classico Riserva

Monte Olmi is the name of this vineyard, located at Pedemonte di Valpolicella in the heart of Valpolicella Classica. The vineyard has a south-western exposure and is 2.5 hectares in size. It is laid out on terraces in order to ensure efficient draining in case of abundant rainfall. At the same time, the depth and the clay structure of the terrain serve to retain water
during dry period. 

Vineyard Notes
Soil: red clay and limestone (30% of which 5% active) of moraine origins.
Vine density: 3500 vines per hectare.
Vineyard age: 20 years.
Cultivation: trent bowe.r
Pruning: 10/14 buds/plant.
Production: 6000 kg/hectare.
Grape varieties: 30% Corvina, 30% Corvinone, 30% Rondinella, 10% Rossignola, Oseleta, Negrara, Dindarella, Croatina and Forselina.

Winemaking Technique
Grape harvest: end of September, beginning of Octobe.r
Grapes drying in fruit storage structure: controlled humidity 4 months.
Soft pressing 
Alcoholic fermentation and maceration: 40/60 days/temperature 15° C.
Ageing: 3/4 years.
Bottling and bottle ageing: 6 months.

Description Of The Wine
Color: strong ruby red. Clear and transparent.
Bouquet: aromas of crushed blackberries, spice and flowers combined with notes of Slavonia oak.
Flavor: full-bodied, with peppery, berry character, medium tannins and a fine finish. The after-taste confirms the character of the bouquet. This wine has a long-lasting and persistent flavour.
Suited for ageing: it is a keeping wine.
Combinations: red meat and game-cheeses.
Serve at: 16-18° C

This style was born in the early Sixties when Lorenzo Tedeschi showed remarkable insight and vinified the grapes from the Monte Olmivineyard separately, thus creating one of the very first single-vineyard wine of Valpolicella, a wine that has become the flagship of our estate.
