SAUVIGNON

These grapes are obtained from plants which are about twenty years old that are grown in a hilly zone with a good thermal excursion such as to guarantee good aromatic quality in various years.

Vinification
Skin maceration is done at low temperature (8-10°C). Soft pressing process follows while the fermentation is performed at a controlled temperature for
a period of about 15 days.

Elevation
This is done in steel tanks with a controlled reduction until the following spring. Once it is bottled it will remain still for two months.

RIBOLLA GIALLA

The grapes are obtained from the same autochthonous plants which are typical to the collio area. The output per hectare is reduced to better the results.

Vinification
Traditional process performed in its grape skin at surrounding temperature for a period of 24 hours.

Elevation
This takes place in steel tanks, left in reduction until the following spring. When in bottles, it will rest for about 2 months.

Wine characteristics
This wine is characterized with a pleasant mix of perfumes which go from a typical local apple to a chestnut flower. It has a rich, elegant and persistent taste in mouth.
Alcoholic content is 12,5% vol.

SCHIOPPETTINO

The grapes are obtained from the same autochthonous plants grown on our hill sides. The 40 year old vineyard is grown in a pre-hill position that enjoys soft winds and light sun, thereby permitting to increase its varietal features.

Vinification
The grapes are hand collected and placed into ventilated boxes and then put into driers for drying (10-12 days). After this, they undergo a pellicular maceration for 10 – 12 days under controlled temperature. During this fermentation period, delestage and short but frequent remounting takes place.

Elevation
Refining is performed in steel barrels for 4-6 months, with several batonnage.

THE COMPANY
Technology and modern equipment have been introduced during the 1999 renovation and permits working with respect and evaluating the grape qualities obtained from the vineyard. Our aim is based on severe control in the fermentation stage and during the elevation both for obtaining white and red quality wines.
